These days, food safety is getting more attention than in the recent past due to consumer awareness, regulations, and industrial competition to offer best quality products. Meat and meat products are very valuable but highly perishable. There is a need for reliable assessment techniques to ensure the safety and quality of these products throughout their shelf life. Classical analytical methods have been replaced with alternative, rapid, simple, and noninvasive methods to enhance productivity and profitability in the meat supply chain. Fourier-transform infrared (FTIR) spectroscopy has become a valuable analytical technique for structural or functional studies related to foods as a rapid, nondestructive, cost-efficient, and sensitive physicochemical fingerprinting method. This technique is readily applicable for routine quality control or industrial applications with a high degree of confidence. FTIR spectroscopy coupled with chemometrics has drawn attention to quality control, safety assessment, and authentication purposes in the meat and meat products domain. This review covers fundamental knowledge on FTIR spectroscopy coupled with chemometric techniques, as well as major applications of this robust method in meat science and technology for adulteration detection, monitoring biochemical and microbiological spoilage and shelf life, determining changes in chemical components such as proteins and lipids.

Authentication and Quality Assessment of Meat Products by Fourier-Transform Infrared (FTIR) Spectroscopy

Synthetic chemical preservatives are widely used in the food industry to delay the deterioration caused by microbial growth, enzyme activities and oxidation reactions. The last few decades have witnessed marked interest in finding natural food preservatives due to the potential health damage of synthetic preservatives; consumers have become skeptical of consuming foods containing these additives. Polyphenols used as natural preservatives that can be extracted from fruits, vegetables, herbs and spices provide the best alternative for partial or complete replacement of their synthetic analogues. The present study’s emphasis was on employing different plant extracts to be efficiently used as antimicrobial agents for developing replacements for the synthetic chemical additives in food products. The study also investigated the antimicrobial potentialities of five medicinal plants, widely used in Egypt (sumac, tamarind, rosemary, roselle and lemon) against six microbial markers (E. coli, P. aeruginosae, B. subtilis, S. aureus, Penicillium sp. and A. niger.). Sumac extracts showed the best activity against all tested microorganisms, producing the widest inhibition zones ranging from 14 to 45 mm, followed by tamarind and roselle extracts, with inhibition zones ranging from 8–36 and 8–34 mm, respectively. On the other hand, extracts of rosemary and lemon showed variable antimicrobial activity. All extracts from all tested plants were less active against fungal species than bacterial species. In all cases, the organic extracts (80% methanol, 80% ethanol) showed the same or greater activity than the aqueous extracts. In addition, the methanolic extracts showed the strongest and broadest spectrum. The most sensitive strain to plant extracts was B. subtilis, while the most resistant strain was P. aeruginosae. The MIC and MBC or MFC values of methanolic extracts were assayed using the broth dilution method. Sumac extract showed the best activity against all tested microorganisms with the lowest values of MIC and MBC or MFC (from 0.260 to 0.877 and 0.310 to 1.316 mg/mL, respectively, for bacteria, and from 1.975 to 2.5 and 2.5 to 4.444 mg/mL, respectively, for fungi). Interestingly, the tested extracts inhibited microbial growth in tomato paste and pasteurized cow milk for a long storage period (increase shelf life) as compared to the control samples. In conclusion, herbal and spice extracts could be successfully applied as natural antimicrobials for the elimination of food borne microbes and pathogen growth.

Antimicrobial Activity of Some Plant Extracts and Their Applications in Homemade Tomato Paste and Pasteurized Cow Milk as Natural Preservatives

Spectroscopic methods in tandem with machine learning methodologies have attracted considerable research interest for the estimation of food quality. The objective of this study was the evaluation of Fourier transform infrared (FTIR) spectroscopy and multispectral imaging (MSI) coupled with appropriate machine learning regression algorithms for assessing meat microbiological quality. For this purpose, minced pork patties were stored aerobically and under modified atmosphere packaging (MAP) conditions, at isothermal and dynamic temperature conditions. At regular time intervals during storage, samples were subjected to (i) microbiological analysis, (ii) FTIR measurements and (iii) MSI acquisition. The collected FTIR data were processed by feature extraction methods to reduce dimensionality, and subsequently Support Vector Machines (SVM) regression models were trained using spectral features (FTIR and MSI) to estimate microbiological quality of meat (microbial population). The regression models were evaluated with different experimental replicates using distinct meat batches. The performance of the models was evaluated in terms of correlation coefficient (r), root mean square error (RMSE), mean absolute error (MAE) and residual prediction deviation (RPD). The RMSE values for the microbial population estimation models using FTIR were 1.268 and 1.024 for aerobic and MAP storage, respectively. The performance in terms of RMSE for the MSI-based models was 1.144 for aerobic and 0.923 for MAP storage, while the combination of FTIR and MSI spectra resulted in models with RMSE equal to 1.146 for aerobic and 0.886 for MAP storage. The experimental results demonstrated the potential of estimating the microbiological quality of minced pork meat from spectroscopic data.

Estimation of the Microbiological Quality of Meat Using Rapid and Non-Invasive Spectroscopic Sensors

Listeria monocytogenes has been referred to as a concern microorganism in cheese making due to its ability to survive and grow in a wide range of environmental conditions, such as refrigeration temperatures, low pH and high salt concentration at the end of the production process. Since cheese may be a potential hazard for consumers, especially high-risk consumers (e.g., pregnant, young children, the elderly, people with medical conditions), efforts of the dairy industry have been aimed at investigating new conservation techniques based on natural additives to meet consumers' demands on less processed foods without compromising the food safety. Thus, the aim of this study was to evaluate the efficacy of Myrtus communis L. (myrtle) and Rosmarinus officinalis L. (rosemary) essential oils (EO) against Listeria monocytogenes ATCC 679 spiked in sheep cheese before ripening. After the cheesemaking process, the samples were stored at 8 °C for 2 h, 1 d, 3 d, 14 d and 28 d. The composition of EO was identified by gas chromatography-mass spectrometry (GC-MS) analysis. Constituents such as 1,8-cineole, limonene, methyl-eugenol, α-pinene, α-terpineol, α-terpinolene and β-pinene were present in both EO, accounting for 44.61% and 39.76% from the total of chemical compounds identified for myrtle and rosemary EO, respectively. According to the chemical classification, both EO were mainly composed of monoterpenes. Minimum inhibitory concentration (MIC) against L. monocytogenes was obtained at 31.25 μL/mL to myrtle EO and at 0.40 μL/mL to rosemary EO. Then, cheeses were inoculated with L. monocytogenes (Ca. 6 log CFU/mL) and EO was added at MIC value. The addition of rosemary and myrtle EO displayed lower counts of L. monocytogenes (p 0.05), their use as natural antimicrobial additives in cheese demonstrated a potential for dairy processors to assure safety against L. monocytogenes.

Characterization of deterioration of fallow deer and goat meat using microbial and mid infrared spectroscopy in tandem with chemometrics

The present work demonstrates the use of Cd2+ as a reactivity probe of the fulvic acids (FAs), humic acids (HAs) and dissolved organic matter (DOM) compost extracts. Significant differences were observed between the extracts, with the HA extract showing the highest reactivity. Comparing the different composts, the largest reactivity variation was again observed for HA then FA and finally DOM extracts. The Cd2+ binding extent was used to calculate the quality of composts and compared with a reference of uncomposted organic fertiliser (FLW), leading to the definition of an operational scale of compost quality. The parameter equivalent mass of fertiliser (mEF) was used for this scale sorted the seven composts from 0.353 to 1.09 kg FLW, for compost of sewage sludge (CSS) and vermicompost of domestic waste (CVDW), respectively. The significance of this parameter was verified through a correlation analysis between binding extent and the effect of compost application on lettuce crop growth in a field trial. The results demonstrate the potentiality of FA and HA extracts as markers of compost bioactivity and the use of Cd2+ as a reactivity probe.
