Abstract: Health trends and digital technologies are of great significance for the health and wellness food market and its development in the future. This study examines whether health trends, digital technology, and market concentration influence health and wellness food consumption in the Asian market. Our analysis uses a panel dataset covering 14 Asian economies from the period 2006–2020 and a panel quantile regression technique with non-additive fixed effects. The results reveal that health trends and digital technology have positive and significant impacts on health and wellness food consumption, whereas the concentration of distribution channels has a negative and significant impact. These results also offer insights into each type of health and wellness food consumption, thereby contributing to the health and wellness food market development. Finally, this study suggests the health and wellness food business development through a consumer-driven open innovation strategy.

Abstract: This chapter presents the conceptual framework, methodology, research design and details of the fieldwork. The study followed the interactive process of qualitative research design as put forth by Maxwell (2005, pp. 2–3). Some aspects of the design were developed prior to the framing of the actual research questions and many others were kept flexible and emergent to the needs of the field. The methodology was shaped by the expected contribution to the area of rural management. The related implications were: (a) the study would have a rural focus, and (b) the researcher would spend a significant amount of time in the actual field settings in close contact with the people, situation and phenomenon under study. Thus, not only the review of literature and framing of the conceptual framework was guided by this expected contribution, but also an important design decision that the study would be essentially field-based was made prior to the actual articulation of specific research questions. Specific design aspects like the choice of case study as the research strategy, data collection methods and tools were subsequently taken.

Abstract: The aim of the research is an in-depth and detailed knowledge of the start-up business model, which is structured according to Canvas visualization. The research sample contains 106 start-ups operating in Slovakia. Each start-up was researched by a member of the research team, who personally recorded the statements of the founder. The research results are based on qualitative analysis and synthesis of statements of the founders of start-ups. The main results of the research are a summary view of the business model of the examined start-ups, which expresses the peculiarities of the start-up business making, including priorities within its blocks, and the identification of space for variations in the business model of start-ups. A secondary result of the research is the subjective and objective circumstances of the creation of a business idea, its content, confirmation of its originality, and the peculiarity of the start-up development process. The practical use of the results consists in providing a pattern of the business model and the possibilities of its variation, which are the result of field research of real and functioning start-ups. The originality and value of the research lie in the direct collection of qualitative data, immediate knowledge of business reality, and the synthesis of results into a comprehensive and detailed picture of the start-up business model.

Abstract: This study provides an empirical investigation of the relationship between grocery retail concentration and retail dairy product prices in the US. The analysis was performed based on a unique dataset on store-level retail prices provided by the IRI. Alternative measures of retail concentration were considered, which included revenue and store selling space-based Herfindahl-Hirschman Index that were computed based on a Nielsen TDLinx dataset on store characteristics. Results from a reduced-form empirical framework estimated via panel data techniques indicated that grocery retail concentration had a positive statistically significant effect on retail dairy product prices in the analyzed locations during the analyzed period of time. Specifically, a 10% increase in concentration was found to lead to 0.46 % rise in retail dairy product prices. This central result was robust to the way in which retail concentration was measured and was consistent with broader empirical evidence in literature on retail market power.

Abstract: The pandemic has accelerated the search for innovative product/process/service solutions in city markets as well as the search for “open innovation challenges” more in line with current needs. The aim of the research is to understand the adaptation mechanisms of the local food system and, in particular, of the public space of the market system. The article analyses the change produced by the COVID-19 pandemic in the municipal markets of Sant Feliu de Guixols, Costa Brava, Spain. The data were collected through a semi-structured questionnaire administered to food sellers and contextually to a group of consumers. Factor analysis and the AGIL model were applied to the data collected and were confirmed with cluster analysis. The analysis highlights that the resilience of sellers is no longer sufficient and in many cases, they have equipped themselves with innovative solutions to meet the new customer demands arising from the pandemic (food delivery, e-commerce, take-away food, digital media, etc.). The document concludes with a discussion of food markets and innovations introduced in this period. Further studies can focus on the relationships between food practices and the transformation of urban spaces so that the food market can support new social practices that promote the food transition. The change would represent a switch which would provide traditionally less powerful actors, such as producers, the opportunity to reformulate the food supply chain in a way more linked to the territory. It would also create a resilient dimension for managing other possible food crises and present a challenge to achieving the ultimate goals of the businesses.
