Abstract: After nitrite treatment, various kinds of pickled vegetables and sun-dried fishes produced in Japan showed direct-acting mutagenicity on Salmonella typhimurium TA100, inducing 1900-18000 revertants/g. Kimchis, sun-dried fishes, sun-dried squid, soy sauces, fish sauces, bean pastes and shrimp paste produced in Korea, the Philippines and Thailand also showed direct-acting mutagenicity after nitrite treatment. All soy sauces and fish sauces tested contained as much tyramine as 17-1020 micrograms/ml, but very low or undetectable amounts of (-)-(1S,3S)- and (-)-(1R,3S)-1-methyl-1,2,3,4-tetrahydro-beta-carboline-3-carboxylic acids.

Abstract: Two perturbation methods are compared for the theories of the cyclotron resonance line shape for electron-phonon systems. The line-shape functions in schemes designated as ``moderately weak coupling'' and ``extremely weak coupling'' by Choi and Chung are obtained using Mori's method of calculation. The results agree exactly with the functions Choi and Chung derived using Argyres and Sigel's projection technique.

Abstract: The analytical response properties of two types of flow-through ammonia gas sensing electrode systems are examined and directly compared under the same experimental conditions. Both detection systems involve the use of continous flow gas dialysis in conjuction with tubular polymer membrane electrode detectors. In one method, the pH of the flowing recipient stream leaving the dialyser is monitored; in the second, ammonium ions are detected. For each of five sample diluents studied, the latter method is shown to offer a greater than 100-fold improvement in detection limits over the more classical pH monitoring technique. Further studies clearly show that the ammonium electrode detection mode also offers superior selectivity over volatile amines (e.g., methylamine, ethylamine, etc.). The reasons for these enhanced analytical characteristics are discussed in terms of ammonia flux through the gas-permeable membrane of the dialyser and appropriate solution equilibria.

Abstract: Formation of diallyl disulfide, identified as a main flavor component of garlic, was gradually decreased by irradiation of 0.05-0.5 kGy, but increased slightly at higher doses of 1.0-3.0 kGy. In garlic stored for 5 months, a dose of 0.1 kGy had little influence on the amount of diallyl disulfide, but higher dose irradiation caused an apparent reduction in the amount of the component.
