Abstract: Oxidative rancidity in stored cooked ground turkey and beef was determined by the thiobarbituric (TBA) test and sensory evaluations. There was an increase in rancidity with storage for all samples; however, beef treated with onion juice or textured vegetable protein showed a slower rate of deterioration. Rancidity in turkey was effectively controlled by hot-water extracts of eggplant tissue, peels of yellow onions, potatoes, and sweet potatoes, although initial values were high. There were high positive correlations between TBA values and panel scores for cooked ground beef. Panel members were less sensitive to the rancid odor in turkey and failed to give low sensory ratings even though TBA numbers were high.

Abstract: The effect of germination on the nutritive value of mung beans (Vigna radiata) was studied in raw and cooked samples after 0, 2 and 4 days of germination. Water content increased, but crude protein, lipids, crude fiber, ash and carbohydrates decreased with germination. Trypsin inhibitor activity did not change significantly while hemagglutinins were absent. Essential amino acids (methionine, tyrptophan and lysine) decreased with germination.

Abstract: Dry heating of rapeseed before grinding increased the sulphur content of the crude rapeseed oil. Boiling the seeds in H2O before grinding caused a slight decrease in the sulphur level of the oil. Control of pH during boiling of the ground rapeseed increased the sulphur content of the oil from ca. 2 ppm at pH 3.1 to ca. 10 ppm at pH 7.6.

Abstract: Demographic and drug abuse characteristics of 3,484 new drug abuse contacts presenting to the General Hospital, Kuala Lumpur, Malaysia are reported. The large majority were heroin inhalers. They were different from the traditional Eastern opium inhalers and similar to Western heroin injectors in that they were young, male, single, and frequently unemployed. These features and the relative underrepresentation of Chinese suggest that the Chinese of this study did not learn narcotic abuse from opium-smoking relatives.

Abstract: Seven non-anthletes [21 26 yrs] and five athletes [23 29 yrs] have participated in the study of cardiovascular and metabolic responses to 15 minutes isometric leg exercise at 15% of each of their maximal voluntary contraction force [MVC]. Oxygen consumption [V02 ]. heart rate [HR] and blood pressure (BP]. were measured during resting. exercise and recovery! periods. The results show that there were a significant increase in V0 2• HR and BP of the two groups studied during exercise, but no significant difference between groups has been found. This study indicates that although cardiovascular response between the rwo groups was not significantly different, 15 minutes isometric leg exercise at 15% MVC has challenged this system in a such a Il'ay to ji/(till the metabolic requirement of the working muscle ill both groups. This finding was discussed in light of the available literatures.
