Abstract: One of the innovation strategies of the bakery industry is the use of new ingredients capable of increasing the health appeal of products. The objective of this study was to evaluate the effect of partial substitution (15%) of wheat flour by young bamboo culm flour (YBCF) in cookies formulations, using a central composite design with two variables (sugar and fat reductions) and three replicates at the central point. Formulations were selected by surface response methodology (p<0.10) and evaluated over 28 days of storage for stability and nutritional composition. Only sugar reduction led to significant differences in the diameter of the cookies. Formulations with 50% of reduction of sugar and fat (F2 and F3, respectively) were selected for the study, in addition to a control formulation (CF). Moisture content and water activity of the cookies remained low throughout the storage, as recommended for the maintenance of the crispness. Cookies F2 and F3 were light-colored, similar to CF, and presented lower energy value (0.83 and 11.73%, respectively), compared with CF. These results indicate that YBCF may be a promising ingredient for the bakery industry, once it contains high fiber levels and allows the reduction of up to 50% sugar and fat in cookies.

Abstract: Objective This study sought to investigate the effects of vitamin D supplementation and aquatic exercise on pulmonary function in postmenopausal women. Materials and methods This prospective and controlled study included 104 women (62 ± 6.5 years) divided into three groups: a control group lacking vitamin D and calcium supplementation which remained sedentary (CG; n = 17); a control group receiving vitamin D and calcium supplementation which remained sedentary (CDG, n = 33); and a group that completed aquatic exercises three times a week and received vitamin D and calcium supplementation (DTG, n = 54). Data before and after 6 months of the study were analyzed, including serum 25-hydroxyvitamin D (25(OH)D) and calcium concentrations, peak expiratory flow (PEF), forced vital capacity (FVC), and cirtometry. Results We observed significant increases in 25(OH)D concentrations in CDG (52.9 ± 2.4 to 69.1 ± 2.2; nmol/L; p < 0.0001) and DTG groups (55.5 ± 3 to 71.5 ± 3 nmol/L; p < 0.0001). PEF increased by 7 ± 2% (p = 0.0080) in CDG group and 11 ± 2% (p < 0.0001) in DTG group, whereas FVC increased by 7 ± 2% (p = 0.0016) in the CDG group and 10 ± 2% (p < 0.0001) in the DTG group, whereas CG had no changes in any of these parameters. The increment value of cirtometry in DTG group (+43 ± 3%) were significantly (p < 0.0001) higher than those in CG (−4 ± 8%) and CDG (+4 ± 9%) groups. Conclusion Our data suggest that vitamin D supplementation improves pulmonary function parameters in postmenopausal women.

Abstract: A composicao corporal tem sido associada positivamente a densidade mineral ossea (DMO), o excesso de peso implica no aumento da carga mecânica no osso. Todavia, ainda ha controversia em relacao a atuacao da massa magra e gorda na qualidade do osso. Objetivo: Avaliar a associacao entre a DMO e a composicao corporal em idosos higidos em diferentes sitios esqueleticos. Metodos: Foram analisados 87 prontuarios e exames de DMO com composicao corporal de idosos do sexo masculino com media de idade de 68,5 (6,5) variando de 60 a 87 anos. Os criterios de inclusao foram valores de DMO dentro do normal (T-score maior ou igual a -1,0); IMC dentro dos valores normais ou sobrepeso (18,5 a 29,5kg/m2). A composicao corporal foi avaliada por meio de densitometria ossea com uma dupla energia absorcao de raios-X (DEXA) em um aparelho LUNAR-DPX. Resultados: Quanto maior a massas magra, gorda e tecidos moles melhor os valores da DMO dos idosos e quanto maior a idade pior a qualidade da DMO. Conclusao: A composicao corporal (massas magra e gorda e tecidos moles) de homens idosos associasse-se positivamente na DMO em todos os sitios do corpo (membros superiores, inferiores e tronco).

Abstract: Common name: Argentine hake. Conservation status: Overexploited (Aubone et al. 2004; Vaz-dos-Santos and Rossi-Wongtschowski 2005; Sao Paulo State Red List—DOE Decree No 53.494/2008). Identification: Opercle upper margin parallel to the lateral line, first branchial arch 12–16 gill rakers, second dorsal fin 30–40 rays, anal fin 36–41 rays, body 120–144 lateral scales rows scales (Inada 1981; Cohen et al. 1990; Lloris et al. 2005). Distribution: Southwestern Atlantic from Brazil (21S) to Argentina (55S) (Figueiredo and Menezes (1978); Lloris et al. 2005). Abundance: Brazilian 2001–2002 (21S–34S) winter-spring and summer bottom trawl surveys: 19,497 and 21 934 tons biomass, respectively (Haimovici et al. 2008); Uruguayan-Argentinean (34S–49S) 1998’s surveys revealed 1 320 038 tons of biomass (Aubone et al. 2004). Habitat: Benthopelagic mainly in continental shelf and slope cold waters (7–23°C) (Cohen et al. 1990).
