Abstract: O estudo teve como objetivo verificar a aceitabilidade sensorial de iogurtes adicionados de inulina e determinar a composicao fisico-quimica da formulacao tradicional e daquela contendo o maior teor da fibra com aceitacao sensorial semelhante a padrao. Foram elaboradas cinco formulacoes de iogurtes sendo: padrao (F1) e as demais com de 2,50% (F2), 5,00% (F3), 7,50% (F4) e 8,80% (F5) adicionadas de inulina. Participaram da analise sensorial 118 provadores nao treinados, de ambos os generos, com idade entre 18 a 48 anos. Os resultados da analise sensorial mostraram que a amostra com adicao de 2,50% de inulina foi aquela com o maior teor e com aceitacao semelhante a padrao, principalmente no atributo sabor, aceitacao global e intencao de compra. A analise fisico-quimica das amostras padrao e com 2,50% de inulina revelou menores teores de calorias e maior teor de fibra alimentar. A elaboracao dos produtos permitiu comprovar que um nivel de adicao de ate 2,50% de inulina em iogurtes foi bem aceito pelos provadores, obtendo-se aceitacao sensorial semelhante ao produto padrao e com boas expectativas de comercializacao.

Abstract: The high mortality rates of calves has encouraged research of the physiological mechanisms that control birth and adaptation of newborns to extrauterine life, to allow early identification of the presence of disease characteristics during the neonatal period. This study aimed to determine the occurrence of anemia in Holstein calves in the first month after birth and address the lack of information on the subject in neonates raised under national conditions. In total, 385 animals, 199 from refrigerated type A raw milk producing and 186 from refrigerated raw milk producing dairy farms, were surveyed. Anemia was observed in 14.3 % of the heifers (55/385), with a higher frequency in the farms producing type A milk (18.6 %, 37/199). It was concluded that the frequency of anemia is significant in neonates of the studied breed, particularly in those with more technified properties (type A milk), with this condition being, in most cases, a possible etiology of iron-deficiency.

Abstract: In order to describe parental attitudes toward school inclusion, 445 parents of elementary school students from first to fourth grade of two municipal schools of the city of Sao Paulo answered a questionnaire and the Likert scale General Inventory of Attitudes toward Inclusive Education (IGAEI) for assessing attitudes. The participants were 169 (37,98%) parents of students with special educational needs included in regular schools (G1) and 276 (62,02%) parents of students the school directors said did not have special needs (G2). The instruments were collectively applied during a parent teacher meeting using individual answer sheets. The results showed that both groups of parents tended to have positive attitudes in relation to inclusive education. However, parents of special educational needs students' attitudes were more positive. Results referring to other researched variables, i.e. types of special educational needs in inclusion process, are also presented. This study tends to corroborate research results from other countries, though some discrepancies have been perceived. In conclusion, this study highlights the importance of parental involvement in the development of inclusive educational systems and suggests that more research is required in the Brazilian educational context.

Abstract: Objetivo deste estudo foi investigar a relacao entre os estados de humor, a variabilidade da frequencia cardiaca (VFC) e creatina quinase (CK) de para-atletas brasileiros. Foram avaliados 12 atletas, integrantes da Selecao Brasileira de Para-Atletismo. Para avaliar a resposta autonomica foi determinada a VFC em repouso, coletando os intervalos R-R em 10 min. Foram coletadas tambem amostras de sangue para analisar a CK total e para conhecer os estados de humor dos atletas, foi utilizado a Escala de Brums, sendo calculados os seis estados de humor (tensao, depressao, raiva, fadiga, confusao e vigor). A analise dos dados foi realizada pela correlacao de Sperman. Os principais resultados demonstraram relacao entre a modulacao parassimpatica e o Vigor dos atletas (r = 0,50 a 0,53; p<0,05). A CK nao se relacionou com nenhum marcador. Conclui-se que houve relacao entre a modulacao parassimpatica da VFC e o Vigor, o que e positivo para o rendimento na competicao.

Abstract: Objectives: To identify social and environmental determinants of health in the perception of community health agents, and to develop a health education process to contribute to the improvement of health promotion. Methods: A qualitative action research based on Freire's Research Itinerary (Culture Circles), using talking maps and integrated panels, with 29 community health agents of the Paraisopolis II Basic Health Unit, in the community of Paraisopolis, Sao Paulo. The analysis of the results was carried out by the Method of Triangulation. Results: Sanitation, housing, behaviors, health services, and other social facilities were identified, which, along with the representation of blaming, were codified and decoded by the integration of technical and traditional knowledge. Conclusions: Knowledge, values and abilities related to social and environmental determinants and their applicability in the Family Health Strategy, as well as the importance of community strengthening for health promotion and for coping with health vulnerabilities and inequities, were critically unveiled.
