Abstract: 1. Proteolysis of β-casein by rennin and by pepsin was completely inhibited in the presence of 10% NaCl and was very significantly reduced by 5% NaCl. The rate of proteolysis of αs-casein was maximal in the presence of 5–10% NaCl. 2. The inhibitory effect of NaCl on the proteolysis of β-casein was independent of pH and incubation temperature. 3. The effectiveness of NaCl in controlling the development of bitter flavour in Cheddar cheese may be due to its inhibitory effect on the proteolysis of β-casein. 4. Rennin hydrolysates of β-casein were bitter in flavour whereas those of αs-casein were not.

Abstract: Summary. As a preliminary to producing continuous cultures of lactic streptococci, several parameters affecting growth rate in broth culture were studied. The optimum pH for growth of 3 strains was c. 6.4. The results indicate that continuous cultivation should not be done above c. 27° and that, in the case of Streptococcus lactis C10, excessive aeration should be avoided. Sparging with CO2 was unnecessary and with N2 was deleterious to growth.

Abstract: SUMMARY The percentage of ether extractable fat in cream direct from a mechanical separator increased with increasing fat content. Centrifugal and positive rotary pumping of cream increased the extractable fat values. The amount of ether extractable fat was influenced by the head pressure on the pump, the presence of air and the cream temperature, and may also be increased during cooling and chilling, the extent depending on the method used. Re-pasteurization of cream delivered from branch to central creameries lowered the emulsion stability. The effect of re-pasteurization was not a temperature effect, but was rather the consequence of the shearing forces to which the cream was exposed during the process.

Abstract: USING constant flow perfusion with Tyrode solution, the response of an isolated canine saphenous vein segment to pervienous nerve stimulation and to drugs was studied. The preparation was arranged so that drugs could be applied either to the luminal surface or the adventitial surface. Pharmacological evidence suggests that the perivenous nerves were noradrenergic. A maximal constrictor response to electrical stimulation was obtained at a frequency of 20 Hz. Little change in response to electrical stimulation occurred over a temperature range from 36-20°C. The constrictor effect of noradrenaline applied to the intimal surface was greater than the effect of this amine applied adventitially. This difference persisted when the vein segment was cocainised. It is suggested that this difference in response cannot be explained solely on the basis of the noradrenergic uptake machanism. Isoprenaline relaxed the venous segment constricted by noradrenaline. This effect appeared to be due to the action of isoprenaline on beta receptors in the vein wall. Acetylcholine had a constrictor effect on this vein segment but angiotensin in the concentrations employed was without effect.

Abstract: MYONEMES (muscle fibres) are classed as holomyonemes or tendomyonemes, the latter having tendon at one or both ends Four quantitative factors are defined: the partition ration (p) of a myoneme, the proportion (t) of tendon in it, the contractility ratio (a) of its fleshy part and the angle (A) through which a bone is swung around an articular axis when the myoneme is fully contracted Equations connecting these quantities are derived It is shown that there is a lower limit to A for holomyonemes; and that the range of p for this type of fibre is limited Tendon is needed if A is to be less than its holomyonemic limit and also if the range of p is increased The pennate arrangement of myonemes is particularly suitable for small movements, this being its primary function Some observational results are given
