Abstract: This study aimed to explore ideal processing condition for black garlic based on the change of nutritional and active components and antioxidant capacity. Fresh garlic was processed under the condition of constant temperature (65, 75 and 85 °C) and relative humidity (70, 75, 80 and 85%) for 16 days. The sensory scores, contents of nutritional and active components, and antioxidant capacity were monitored. The sensory scores reached the maximum on the 8th day at 85% humidity and 75 °C. The contents of nutritional components were significantly affected by humidity and temperature, and 85% humidity and 75 °C were appropriate. The polyphenol content increased with increase in temperature and decrease in humidity. The reducing sugars and total sugars, total acids and 5-HMF were higher at 75 °C than at 65 and 85 °C. Reducing sugar and protein contents and sensory scores decreased on the 8th day. Maintaining the temperature of 75 °C and relative humidity of 85% for 8 days were ideal for black garlic to retain antioxidant capacity and abundant nutrients.

Abstract: A lightweight evaluation system, which can be deployed on common user equipment in commercial mobile networks, is proposed for measuring the user experience of multimedia services. The user experience evaluation system can measure the key quality indicators of traditional and emerging services in different scenarios. In contrast to traffic models, this system models typical user behavior to construct complex scenarios of communication networks. In commercial network experiments, the proposed evaluation system achieves stable and efficient performance in complex scenarios, which consist of different types of services and typical user behaviors.

Abstract: Well-distributed CuBi2O4 microspheres prepared by microwave-assisted co-precipitation method and subsequent calcination treatment were used to activate peroxymonosulfate (PMS) for benzophenone-4 (BP-4) degradation. Uniformly distributed active sites, hydroxyl groups, and the cycle of Cu(I)/Cu(II) on the surface of CuBi2O4 microspheres effectively facilitated PMS activation to generate SO4 −, OH and 1O2, but 1O2 was not the dominant reactive oxygen species. The degradation mechanism of BP-4 was proposed through theoretical calculations and intermediates identification that the first and dominant step of BP-4 oxidation with SO4 −/ OH is radical addition reaction rather than single electron transfer. It breaks through previous reports that reaction between SO4 − and electron-rich aromatic organics is mainly via single electron transfer. Ecotoxicity assessment by ECOSAR program indicated that the presence of Cl− did not increase the toxicity of intermediates because generated chlorinated intermediates are hydrophilic.
