Abstract: A study was conducted to evaluate the nutrient content and variability of distiller's dried grains with solubles (DDGS) originating from new (less than 5 yr old) ethanol plants in Minnesota and South Dakota. Ten plants (8 MN, 2 SD) participated in the study, submitting a total of 118 samples. Samples were collected every 2 mo from ten ethanol plants in the Minnesota-South Dakota (MNSD) region from 1997 to 1999 and were analyzed for amino acid levels, DM, CP, crude fiber, crude fat, ash, ADF, NDF, Ca, P, K, Mg, S, Na, Zn, Mn, Cu, and Fe analysis. Digestible energy (DE), ME, and NFE levels were also calculated. Means (dry-matter basis) and coefficients of variation for each nutrient among all plants during 1997 to 1999 were DM (88.9%, 1.7%), CP (30.2%, 6.4%), crude fat (10.9%, 7.8%), crude fiber (8.8%, 8.7%), ash (5.8%, 14.7%), NFE (45.5%, 6.1%), ADF (16.2%, 28.4%), NDF (42.1%, 14.3%), calculated DE (3,990 kcal/kg, 3.24%), calculated ME (3,749 kcal/kg, 3.28%), Arg (1.20%, 9.1%), His (0.76%, 7.8%), Ile (1.12%, 8.7%), Leu (3.55%, 6.4%), Lys (0.85%, 17.3%), Met (0.55%, 13.6%), Phe (1.47%, 6.6%), Thr (1.13%, 6.4%), Trp (0.25%, 6.7%), Val (1.50%, 7.2%), Ca (0.06%, 57.2%), and P (0.89%, 11.7%), respectively. Among the amino acids analyzed, Lys was the most variable (CV = 17.3%), followed by Met (CV = 13.6%). Nutrient levels of MNSD DDGS were higher in crude fat, NDF, DE, ME, P, Lys, Met, and Thr and lower for DM, ADF, and Ca than NRC (1998) values. Nutrient values differed between years for ash, DE, Mn, Zn, Cys (P < 0.10), Fat, TDN, ME, Met, Ile (P < 0.05), Ca, P, K, Mg, and Cu (P < 0.01). These results suggest that gross energy; P; and total Lys, Met, and Thr levels are higher in DDGS from MNSD ethanol plants compared to published values and chemical analysis values of a DDGS sample obtained from an older Midwestern plant.

Abstract: Establishing relationships among specific quality traits is important if significant progress toward developing improved pork quality is to be realized. As part of a study to examine the individual effects of genes on meat quality traits in pigs, a three-generation resource family was developed. Two Berkshire sires and nine Yorkshire dams were used to produce nine F1 litters. Sixty-five matings were made from the F1 litters to produce four sets of F2 offspring, for a total of 525 F2 animals used in the study. These F2 animals were slaughtered at a commercial facility upon reaching approximately 110 kg. Carcass composition traits, pH measurements, and subjective quality scores were made at 24 h postmortem. Loin samples (n = 525) were collected at 48 h postmortem, and meat quality traits were evaluated. These traits included pH (48 h), Hunter L-values, drip loss, glycolytic potential, ratio of type IIa/IIb myosin heavy chains (IIa/IIb), total lipid, instrumental measures of tenderness using the Star Probe attachment of the Instron, cook loss measurements, and sensory evaluations. Significant phenotypic correlations were found between many carcass, instrumental, and biochemical measurements, and sensory quality traits. Star Probe measurements were significantly correlated with drip loss (0.29), glycolytic potential (0.30), pH (-0.29), total lipid (-0.14), and Hunter L-values (0.28). Drip loss was significantly correlated with glycolytic potential (0.36), pH (-0.28), IIa/IIb (-0.10), and Hunter L-values (0.33). Hunter L-values were also significantly correlated with total lipid (0.33) and IIa/ IIb (-0.11). Sensory tenderness, flavor, and off-flavor scores were significantly correlated with drip loss, pH, and glycolytic potential measurements. Marbling score, total lipid, and drip loss were not significantly correlated with sensory juiciness scores, but cooking loss was. Marbling and total lipid were significantly correlated with firmness scores (0.37 and 0.31, respectively). Taken together, the data in this study suggest that changes in some meat quality traits can affect many other meat quality attributes. The correlations yield information that could aid in directing future studies aimed at understanding the underlying biological mechanisms behind the development of many quality traits.

Abstract: Artificial insemination (AI) was the first great biotechnology applied to improve reproduction and genetics of farm animals. It has had an enormous impact worldwide in many species, particularly in dairy cattle. The acceptance of AI technology worldwide provided the impetus for developing other technologies, such as cryopreservation and sexing of sperm, estrous cycle regulation, and embryo harvesting, freezing, culture and transfer, and cloning. New, highly effective methods of sire evaluation were developed. The history of development of AI is reviewed, particularly in dairy cattle, in which the impact on genetic improvement and control of venereal diseases have been greatest. Other

Abstract: The objective of this study was to compare fatty acid weight percentages and cholesterol concentrations of longissimus dorsi (LD), semitendinosus (ST), and supraspinatus (SS) muscles (n = 10 for each) of range bison (31 mo of age), feedlot-finished bison (18 mo of age), range beef cows (4 to 7 yr of age), feedlot steers (18 mo of age), free-ranging cow elk (3 to 5 yr of age), and chicken breast. Lipids were analyzed by capillary GLC. Total saturated fatty acids (SFA) were greater (P 0.05) in SAT. In LD, polyunsaturated fatty acids (PUFA) were highest (P < 0.01) for elk and range bison and lowest (P < 0.01) for feedlot steers within each muscle. Range bison and range beef cows had greater (P < 0.01) PUFA in LD and ST than feedlot bison or steers, respectively. Range-fed animals had higher (P < 0.01) n-3 fatty acids than feedlot-fed animals or chicken breast. Chicken breast n-6 fatty acids were greater (P < 0.01) than for muscles from bison, beef, or elk. Elk had higher (P < 0.01) n-6 fatty acids than bison or beef cattle; however, range-fed animals had higher (P < 0.01) n-6 fatty acids than feedlot-fed animals in ST. Conjugated linoleic acid (CLA, 18:2cis-9, trans-11) in LD was greatest (P < 0.01) for range beef cows (0.4%), and lowest for chicken breast and elk (mean = 0.1%). In ST, CLA was greatest (P < 0.01) for range and feedlot bison and range beef cows (mean = 0.4%) and lowest for elk and chicken breast (mean = 0.1%). Also, SS CLA was greatest (P < 0.01) for range beef cows (0.5%) and lowest for chicken breast (0.1%). Mean total fatty acid concentration (g/100 g tissue) for all muscles was highest (P < 0.01) for feedlot bison and feedlot cattle and lowest (P < 0.01) for range bison, range beef cows, elk, and chicken. Chicken breast cholesterol (mg/100 g tissue) was higher (P < 0.01) than LD and ST cholesterol, which were lowest (P < 0.01; 43.8) for range bison and intermediate for the other species. Cholesterol in SS was highest (P < 0.01) for feedlot bison and steers, which were similar to chicken breast (mean = 61.2 vs 52.8 for the mean of the other species). We conclude that lipid composition of bison muscle varies with feeding regimen, and range-fed bison had muscle lipid composition similar to that of forage-fed beef cows and wild elk.

Abstract: Micromolar calcium activated neutral protease (CAPN1) was evaluated as a candidate gene for a quantitative trait locus (QTL) on BTA29 affecting meat tenderness by characterization of nucleotide sequence variation in the gene. Single-nucleotide polymorphisms (SNP) were identified by sequencing all 22 exons and 19 of the 21 introns in two sires (Piedmontese x Angus located at the U.S. Meat Animal Research Center in Clay Center, NE; Jersey x Limousin located at AgResearch in New Zealand) of independent resource populations previously shown to be segregating meat tenderness QTL on BTA29. The majority of the 38 SNP were found in introns or were synonymous substitutions in the coding regions, with two exceptions. Exons 14 and 9 contained SNP that were predicted to alter the protein sequence by the substitution of isoleucine for valine in Domain III of the protein, and alanine for glycine in Domain II of the protein. The resource populations were genotyped for these two SNP in addition to six intronic polymorphisms and two silent substitutions. Analysis of genotypes and shear force values in both populations revealed a difference between paternal CAPN1 alleles in which the allele encoding isoleucine at position 530 and glycine at position 316 associated with decreased meat tenderness (increased shear force values) relative to the allele encoding valine at position 530 and alanine at position 316 (P < 0.05). The association of maternal alleles with meat tenderness phenotypes is consistent with the hypothesis of CAPN1 as the gene underlying the QTL effect in two independent resource populations and presents the possibility of using these markers for selective breeding to reduce the numbers of animals with unfavorable meat tenderness traits.

Abstract: Brewers dried yeast, a source of mannan oligosaccharides (MOS), was assessed as an alternative to an antimicrobial agent (carbadox) for young pigs in two experiments. The yeast contained 5.2% MOS. Agglutination tests confirmed adsorption of several serovars of E. coli and Salmonella spp. onto the yeast product. In Exp. 1, seven replicates (five pigs per pen) of 22-d-old pigs were fed a nonmedicated basal diet or the basal diet with carbadox (55 mg/kg), yeast (3%), or a combination of 3% yeast and 2% citric acid for 28 d. Carbadox did not improve growth performance. Growth rate and feed intake were depressed (P 0.05) among treatments, but fecal shedding of carbadox-resistant coliforms was higher (P < 0.01) during the 9-d period in pigs fed carbadox. Total fecal coliforms were consistently lower throughout the postinoculation period in pigs fed yeast (P < 0.05). Yeast reduced colonization oftotal coliforms in the duodenum,jejunum, cecum, and colon, but it did not have a consistent effect on colonization of E. coli K88. Pigs fed yeast tended (P < 0.10) to have higher serum IgG levels than controls. In these experiments, brewers dried yeast and carbadox had minimal effects on growth, microbial populations, and intestinal health traits of early-weaned pigs, but certain serum immunological traits were enhanced by feeding yeast.

Abstract: Based on performance of feedlot cattle, steam flaking increases the value of corn by 18%, considerably more than is suggested by tabular values. Tabular values underestimate the energy availability of flaked corn by failing to account for digestibility of the nonstarch OM that is increased by flaking by the same magnitude (10%) as starch. Correcting for improvement in digestibility of nonstarch OM increases the NEg value of steam-flaked corn to 1.70 Mcal/kg, a value very close to values calculated from cattle performance trials. Digestibility of starch from corn grain is limited by the protein matrix that encapsulates starch granules, and by the compact nature of the starch itself. Disruption of the protein matrix (by shear forces on hot grain during flaking) is the first limiting step toward optimizing starch digestion. Five critical production factors influence the quality of steam-flaked corn: steam chest temperature, steaming time, roll corrugation, roll gap, and roll tension. For optimal shear, it is important that rolls be hot and that kernels be hot when flaked. Steam chests should be designed to allow a steaming time of at least 30 min at maximum roller mill capacity producing a flake of 0.31 kg/L (24 lb/bushel). As little as 5% moisture uptake during steaming appears adequate. The rate of flaking and distribution of kernels across the rolls also are critical. Quality standards for steam-flaked corn include measurements of flake thickness, flake density, starch solubility, and enzyme reactivity. Flake density, the most common quality standard, closely associated with starch solubility (r2 = 0.87) and enzyme reactivity (r2 = 0.79), still explains only 63% of the variability in percentage fecal starch and 52% of the variability in starch digestibility. Direct determination of fecal starch can explain 91% of the variability in starch digestion. The NEg value of corn can be predicted from fecal starch: NEg= 1.78 - 0.0184FS. Starch digestion is a Kappa Curve function of hot flake density, reaching a maximum at a flake density of approximately 0.31 kg/L. Flaking to a density of less than 0.31 kg/L, though increasing starch solubility, may reduce DMI, increase variability of weight gain among animals within a pen, and predispose cattle to acidosis and bloat without increasing starch digestion. We recommend that the steam-flaking process be optimized on the basis of fecal starch analysis.

Abstract: A study was conducted to determine whether bacterial direct-fed microbials (DFM) could be used to minimize the risk of acidosis in feedlot cattle receiving high concentrate diets. Six ruminally cannulated steers, previously adapted to a high concentrate diet, were used in a double 3 x 3 Latin square to study the effects of DFM on feed intake, ruminal pH, and ruminal and blood characteristics. Steers were provided ad libitum access to a diet containing steam-rolled barley, barley silage, and a protein-mineral supplement at 87, 9, and 4% (DM basis), respectively. Treatments were as follows: control, Propionibacterium P15 (P15), and Propionibacterium P15 and Enterococcus faecium EF212 (PE). The bacterial treatments (10(9) cfu/g) plus whey powder carrier, or whey powder alone for control, were top-dressed once daily at the time of feeding (10 g/[steer/d]). Periods consisted of 2 wk of adaptation and 1 wk of measurements. Ruminal pH was continuously measured for 6 d using indwelling electrodes. Dry matter intake and ruminal pH (mean, minimum, hours, and area pH 0.05). However, supplementation with P15 increased protozoal numbers (P < 0.05) with a concomitant increase in ruminal NH3 concentration (P < 0.01) and a decrease in the number of amylolytic bacteria (P < 0.05) compared with the control. Streptococcus bovis, enumerated using a selective medium, was numerically reduced with supplementation of PE. Although blood pH and blood glucose were not affected by DFM supplementation, steers fed PE had numerically lower concentrations of blood CO2 than control steers, which is consistent with a reduced risk of metabolic acidosis. Although the bacterial DFM used in this study did not induce changes in DMI or ruminal and blood pH, some rumen and blood variables indicated that the bacterial DFM used in this study may decrease the risk of acidosis in feedlot cattle.

Abstract: Three experiments were conducted to evaluate the effect of feeding pharmacological concentrations of zinc (Zn), from organic and inorganic sources, on growth performance, plasma and tissue Zn accumulation, and Zn excretion of nursery pigs. Blood from all pigs was collected for plasma Zn determination on d 14 in Exp. 1, d 7 and 28 in Exp. 2, and d 15 in Exp. 3. In Exp. 1, 2, and 3, 90, 100, and 15 crossbred (GenetiPorc USA, LLC, Morris, MN) pigs were weaned at 24+/-0.5, 18, and 17 d of age (6.45, 5.47, and 5.3 kg avg initial BW), respectively, and allotted to dietary treatment based on initial weight, sex, and litter. A Phase 1 nursery diet was fed as crumbles from d 0 to 14 in Exp. 1, 2, and 3, and a Phase 2 nursery diet was fed as pellets from d 15 to 28 in Exp. 1 and 2. The Phase 1 and Phase 2 basal diets were supplemented with 100 ppm Zn as ZnSO4. Both dietary phases contained the same five dietary treatments: 150 ppm additional Zn as zinc oxide (ZnO), 500 ppm added Zn as ZnO, 500 ppm added Zn as a Zn-amino acid complex (Availa-Zn 100), 500 ppm added Zn as a Zn-polysaccharide complex (SQM-Zn), and 3,000 ppm added Zn as ZnO. Overall in Exp. 1, pigs fed 500 ppm added Zn as SQM-Zn or 3,000 ppm added Zn as ZnO had greater ADG (P < 0.05) than pigs fed 150 ppm, 500 ppm added Zn as ZnO, or 500 ppm added Zn as Availa-Zn 100 (0.44 and 0.46 kg/d vs 0.35, 0.38, and 0.33 kg/d respectively). Overall in Exp. 2, pigs fed 3,000 ppm added Zn as ZnO had greater (P < 0.05) ADG and ADFI than pigs fed any other dietary treatment. On d 14 of Exp. 1 and d 28 of Exp. 2, pigs fed 3,000 ppm added Zn as ZnO had higher (P < 0.05) plasma Zn concentrations than pigs on any other treatment. In Exp. 3, fecal, urinary, and liver Zn concentrations were greatest (P < 0.05) in pigs fed 3,000 ppm added Zn as ZnO. On d 10 to 15 of Exp. 3, pigs fed 3,000 ppm added Zn as ZnO had the most negative Zn balance (P < 0.05) compared with pigs fed the other four dietary Zn treatments. In conclusion, feeding 3,000 ppm added Zn as ZnO improves nursery pig performance; however, under certain nursery conditions the use of 500 ppm added Zn as SQM-Zn may also enhance performance. The major factor affecting nutrient excretion appears to be dietary concentration, independent of source.

Abstract: The amount of nutrients (i.e., N, P, Zn, and Cu) and associated odors emitted from production animals into the environment can be modulated by sev- eral different nutritional strategies, but their practical application is dependent on costs and biological limita- tions. In general, nutrient excretion may be reduced by avoiding the overfeeding of specific nutrients or by us- ing nutritional manipulations to enhance nutrient utili- zation in the animal. Loss to the environment can be avoided by manufacturing and handling the feed in a pelletized form that will minimize waste and improve feed/gain. Other strategies for minimizing nutrient losses include: 1) the development of feeding programs that are specific for sex and strain of the animal; 2) increasing the number of feed phases to better meet the animal's age-related requirements; 3) formulating diets to include the minimal amounts of nutrients re- quired to satisfy production goals; 4) meeting the ani- mal's amino acid requirements; 5) using synthetic amino acid supplements to feed to reduce N emission; 6) using feed ingredients with high digestibility and nutrient bioavailability; and 7) formulating diets based on nutrient availability instead of total nutrient con- tent. Nutrient digestibility of feedstuffs is dependent on processing conditions, genetic characteristics of the grains and oilseeds, and the presence of nutritional antagonists in specific feedstuffs used in the diet. Feed ingredients that lead to odor production can be avoided (e.g., fishmeal and some easily fermentable feed ingre- dients). Feed additives, such as antibiotics, nonstarch polysaccharides, direct-fed microbials, organic acids, microbial enzymes (i.e., phytase, carbohydrases, and proteases) can be used to increase the digestibility and absorption of nutrients or to modulate the microflora. Finally, a cost factor for the control or disposal of nutri- ents or odor should be considered in the feed formula- tion to optimize the various nutritional strategies dis- cussed above. Regardless of biological and economic limitations, significant reductions in nutrient and odor emission from nonruminants can be achieved by appro- priate nutritional strategies, but response may differ for swine and poultry.

Abstract: The effects of dietary conjugated linoleic acid (CLA) on fatty acid composition, lipid oxidation, and pork quality were investigated. Pigs (n = 20) were fed a diet containing 0, 1, 2.5, or 5% CLA for 4 wk and slaughtered at 105 kg. The longissimus thoracis et lumborum muscle was collected at 24 h postmortem. Pork loin chops (3 cm thick) were packaged aerobically and stored at 4°C for 7 d. Samples were analyzed for ultimate pH, intramuscular fat content, fatty acid composition, thiobarbituric acid-reactive substances, color (L * , a * , b * ), and water-holding capacity. Dietary CLA reduced the concentration of linoleic acid and increased CLA concentration in intramuscular fat of pork loin (P < 0.05). The concentration of CLA in muscle was increased with dietary CLA level and did not change during storage. Thiobarbituric acid-reactive substance value of control was higher than that of the CLA-fed groups (P < 0.05). Intramuscular fat content was increased by dietary CLA, and less purge loss was observed with samples from CLA-fed pigs (P < 0.05). Dietary CLA improved the color stability of pork loin during cold storage. After 7 d, lightness (L * ) and yellowness (b * ) of the 5% CLA-fed group were significantly lower than those of control (P < 0.05). The results indicated that the water-holding capacity of pork loin was increased with increased intramuscular fat content apparently caused by dietary CLA. Also, the data indicated that color stability of pork was improved with inhibition of lipid oxidation and changing of fatty acid composition by dietary CLA.

Abstract: Sixty Angus and Angus x Hereford steers (246 kg initial BW) were used to determine the effects of Zn level and source on performance, immune response, and carcass characteristics of growing and finishing steers. Treatments consisted of 1) control (no supplemental Zn), 2) ZnO, 3) Zn proteinate-A (ZnProt-A, 10% Zn), and 4) ZnProt-B (15% Zn). Treatments 2, 3, and 4 supplied 25 mg of supplemental Zn/kg diet. Steers were individually fed a corn silage-based diet during the 84-d growing phase and a high corn diet during the finishing phase. Cell-mediated and humoral immune response measurements were obtained between d 67 and 74 of the growing phase. Equal number of steers per treatment were slaughtered after receiving the finishing diets for 84 or 112 d. Performance and carcass measurements were similar in steers fed the two ZnProt sources. Zinc supplementation, regardless of source, increased (P < 0.05) ADG during the growing phase. In the finishing phase, ADG (P = 0.10) and gain/feed (P = 0.07) tended to be higher for steers fed ZnProt compared with those supplemented with ZnO. Gain and feed efficiency were similar for control and ZnO-supplemented steers during the finishing phase. Steers fed ZnProt had heavier (P < 0.05) hot carcass weights and slightly higher (P < 0.05) dressing percentages than those in the control or ZnO treatments. Quality grade, yield grade, marbling, and backfat were increased by Zn supplementation, but were not affected by Zn source. In vitro response of lymphocytes to mitogen stimulation and in vivo swelling response following intradermal injection of phytohemagglutinin were not affected by Zn level or source. Humoral immune response following vaccination with infectious bovine rhinotracheitis also was not affected by treatment. Soluble concentrations of Zn in ruminal fluid were higher (P < 0.05) in steers fed ZnProt compared to ZnO steers. Results indicate that ZnProt may improve performance of finishing steers above that observed with inorganic Zn supplementation.

Abstract: One hundred beef carcasses were selected at three packing plants and were used to determine the relationship between glycolytic potential (GP) and dark, firm, and dry (DFD) beef and to determine the effects of DFD status and GP on cooked beef palatability. Eight individual muscles were excised from one hindquarter of each carcass at d 7 postmortem: longissimus lumborum, psoas major, gluteus medius, tensor fasciae latae, rectus femoris, semimembranosus, biceps femoris, and semitendinosus. Ultimate pH, colorimeter readings, and Warner-Bratzler shear force were determined for all eight muscles at d 7 postmortem. A nine-member trained sensory panel evaluated cooked longissimus lumborum, gluteus medius, and semimembranosus steaks. Traits determined solely for the longissimus lumborum were GP (2 x [glycogen + glucose + glucose-6-phosphate] + lactate) and ether-extractable fat. A curvilinear relationship existed between GP and ultimate pH within the longissimus muscle. There appeared to be a GP threshold at approximately 100 micromol/g, below which lower GP was associated with higher ultimate pH and above which GP had no effect on ultimate pH. The greatest pH and muscle color differences between normal and DFD carcasses were observed in the longissimus lumborum, gluteus medius, semimembranosus, and semitendinosus muscles. Cooked longissimus from DFD carcasses had higher shear force values (46% greater) and more shear force variation (2.3 times greater variation) than those from normal carcasses. Dark cutting carcasses also had higher shear force values for gluteus medius (33% greater) and semimembranosus (36% greater) than normal carcasses. Sensory panel tenderness of longissimus, gluteus medius, and semimembranosus was lower for DFD carcasses than for normal carcasses. Longissimus and gluteus medius flavor desirability scores were lower for DFD than for normal carcasses. Steaks from DFD carcasses had more off-flavor comments than steaks from normal carcasses, specifically more "peanutty," "sour," and "bitter" flavors. The DFD effect of higher shear force values was approximately five times greater (+3.11 kg vs +0.63 kg) for carcasses with "slight" marbling scores than for carcasses with "small" marbling scores. In general, higher GP was associated with increased tenderness, even among normal carcasses. In conclusion, low GP was associated with DFD beef and resulted in substantially less-palatable cooked steaks.

Abstract: A study was conducted with 20 weaned barrows (14 d, 4.98 +/- .21 kg) to determine the effect of spray-dried plasma (SDP) on the pig's immune response to a lipopolysaccharide (LPS) challenge. After weaning, pigs were fed a diet containing 0 or 7% SDP for 7 d. On d 6 postweaning, all pigs were fitted with a jugular catheter. On d 7 postweaning, the pigs were given an i.p. injection of either saline or LPS (150 microg/kg BW) followed by a 3-h blood collection every 15 min. Following blood collection, all pigs were killed and tissue was collected for mRNA analysis. Additionally, the small intestine was collected for measurement of villus height, crypt depth, and villus height:crypt depth ratio (VCR) at three sites (25, 50, and 75% of the total length). Feeding SDP resulted in reduced (P 0.10) cytokine mRNA expression, whereas LPS reduced expression of TNF-alpha mRNA in the spleen and IL-1beta mRNA in the adrenal gland, spleen, and thymus for pigs fed the diet without SDP. For pigs fed the diet with SDP, LPS caused serum TNF-alpha to increase 150-fold compared to a 60-fold increase for pigs fed the diet without SDP. Similarly, interferon-gamma (IFN-gamma) increased 110-fold for pigs fed the diet with SDP compared to a 16-fold increase for pigs fed the diet without SDP. For pigs fed the diet with SDP, LPS caused major villus atrophy, whereas for pigs fed the diet without SDP, LPS had no effect on intestinal morphology. Abstract: Two experiments, one involving 29 commercial farms and the other involving 94 commercial farms, were conducted to examine the effects of a training program targeting a number of attitudinal and behavioral variables in stockpeople. These stockperson variables had been previously shown to be related to fear of humans and productivity of commercial cows. In both experiments, two treatments were imposed: an Intervention treatment, consisting of a cognitive-behavioral intervention procedure designed to improve the attitude and behavior of stockpeople toward cows, and a Control treatment, in which no intervention was attempted. In Exp. 1, an analysis of covariance, using previous lactation variables as the covariate, revealed effects of the Intervention treatment on the attitude and behavior of the stockpeople and the behavior of cows. Stockpeople at Intervention farms showed more (P < 0.01) positive beliefs about handling cows and used a lower (P < 0.05) number and percentage of negative tactile interactions in handling cows than stockpeople at the Control farms. Cows at the Intervention farms showed a shorter (P < 0.05) flight distance to humans, indicating a lower level of fear of humans by these cows. However, 36% of the Intervention farms failed to show a reduction in average flight distance over the two lactations. Although there was no significant treatment effect on milk yield, the Intervention farms in which fear levels declined following the intervention had a higher (P < 0.05) milk yield than the other farms. In Exp. 2, a significant (P < 0.05) increase was found in the milk yield of cows following the Intervention treatment. Similar treatment effects were observed on both milk protein and milk fat. These results indicate that cognitive-behavioral interventions that successfully target the key attitudes and behavior of stockpeople that regulate the cow's fear of humans offer the industry good opportunities to improve the productivity of cows.

Abstract: Obesity has been a major concern in the horse industry for many years, and the recent discovery of leptin and leptin receptors in numerous nonequine species has provided a basis for new approaches to study this problem in equine. The objectives were to: 1) clone a partial sequence of the equine leptin and leptin receptor genes so as to enable the design of primers for RT-PCR determination of leptin and leptin receptor gene presence and distribution in tissues, 2) develop a radioimmunoassay to quantify peripheral concentrations of leptin in equine, 3) determine if peripheral concentrations of leptin correlate with body condition scores in equine, and 4) determine if changing body condition scores would influence peripheral concentrations of leptin in equine. In Experiment 1, equine leptin (GenBank accession number AF179275) and the long-form of the equine leptin receptor (GenBank accession number AF139663) genes were partially sequenced. Equine leptin receptor mRNA was detected in liver, lung, testis, ovary, choroid plexus, hypothalamus, and subcutaneous adipose tissues using RT-PCR. In Experiment 2, 71 horses were categorized by gender, age, and body condition score and blood samples were collected. Sera were assayed for leptin using a heterologous leptin radioimmunoassay developed for equine sera. Serum concentrations of leptin increased in horses with body condition score (1 = thin to 9 = fat; r = 0.64; P = 0.0001). Furthermore, serum concentrations of leptin were greater in geldings and stallions than in mares (P = 0.0002), and tended to increase with age of the animal (P = 0.08). In Experiment 3, blood samples, body weights, and body condition scores were collected every 14 d from 18 pony mares assigned to gain or lose weight over a 14-wk interval based on initial body condition score. Although statistical changes (P = 0.001) in body condition scores were achieved, congruent statistical changes in peripheral concentrations of leptin were not observed, likely due to the small range of change that occurred. Nonetheless, serum concentrations of leptin tended to be greater in fat-restricted mares than in thin-supplemented mares (P = 0.09). We conclude that leptin and leptin receptors are present in equine tissues and that peripheral concentrations of leptin reflect a significant influence of fat mass in equine.

To achieve this, it is neces- sary to identify and understand the possible causes of embryonic death. Because fertilization rates are gener- ally high in swine, early embryonic loss during the first 20 d of gestation is considered to critically effect poten- tial litter size. Abstract: The co-occurrence of Fusarium mycotoxins in contaminated swine diets has been shown to result in synergistic toxicity beyond that observed for individual toxins. An experiment was conducted, therefore, to investigate the effects of feeding a blend of grains naturally contaminated with Fusarium mycotoxins on growth, brain regional neurochemistry, serum immunoglobulin (Ig) concentrations, serum chemistry, hematology, and organ weights of starter pigs. Three levels of glucomannan polymer (GM polymer, extract of yeast cell wall, Alltech Inc.) were also tested for its efficacy to overcome Fusarium mycotoxicoses. A total of 175 starter pigs (initial weight of 10 +/- 1.1 kg) were fed five diets (seven pens of five pigs per diet) for 21 d. Diets included (1) control, (2) blend of contaminated grains, (3) contaminated grains + 0.05% GM polymer (4) contaminated grains + 0.10% GM polymer and (5) contaminated grains + 0.20% GM polymer. Diets containing contaminated grains averaged 5.5 ppm deoxynivalenol, 0.5 ppm 15-acetyldeoxynivalenol, 26.8 ppm fuuric acid, and 0.4 ppm zearalenone. Feed intake and weight gain of all pigs fed contaminated grains was significantly reduced compared to controls throughout the experiment. The weights of liver and kidney, expressed as a percentage of body weight, were lower in pigs fed the contaminated diet than in those fed the control diet. The feeding of contaminated grains significantly reduced concentrations of dopamine in the hypothalamus and pons and concentrations of dihydroxyphenylacetic acid and norepinephrine in the pons. The ratios of 5-hydroxyindoleacetic acid to serotonin, however, were elevated in the hypothalamus and pons. The feeding of contaminated grains increased serum IgM and IgA concentrations, while serum IgG concentrations were not altered. The supplementation of GM polymer prevented some of the mycotoxin-induced alterations in brain neurotransmitter and serum Ig concentrations. In summary, the feeding of grains naturally contaminated with Fusarium mycotoxins reduced growth, altered brain neurochemistry, increased serum Ig concentrations, and decreased organ weights in starter pigs. Some of the Fusarium mycotoxin-induced changes in neurochemistry and serum Ig concentrations can be prevented by the feeding of yeast cell wall polymer at appropriate concentrations, although this was not reflected in increased growth rate under these experimental conditions.

Abstract: A feeding trial was conducted to evaluate the effect of aflatoxin (AF)-contaminated diets on growth and hematological and immunological parameters. Low doses of aflatoxins (140 and 280 ppb) were included in a corn-soybean diet provided for ad libitum consumption to 36 weanling piglets for a period of 4 wk. A "dose-related" decrease in weight gain was observed in treated animals. This effect was significant (P < 0.05) in the 280 ppb-treated group compared to the control group. Ingestion of AF-contaminated feed at either level had no effect on total red blood cell numbers or on their relative number of lymphocytes, monocytes, neutrophils, basophils, and eosinophils in blood. Likewise, AF did not alter globulin, albumins, or total protein concentrations in serum, nor did AF alter the expression of regulatory cytokines produced by either Th1 (IL-2) or Th2 (IL-4) lymphocyte subsets in phytohemagglutinin-stimulated blood samples. By contrast, AF had a biphasic effect on total white blood cell number; the low dose of AF (140 ppb) decreased the total number of white blood cells, whereas the high dose (280 ppb) had the opposite effect. Consumption of AF also increased the concentration of gamma-globulin in the serum. A reduced immune response induced by Mycoplasma agalactiae in the 280-ppb-treated group was also observed. Cytokine mRNA expression in phytohemagglutinin-stimulated blood cells indicated that AF decreased proinflammatory (IL-1beta, TNF-alpha) and increased anti-inflammatory (IL-10) cytokine mRNA expression. These results demonstrate that low doses of AF depress growth and alter many aspects of humoral and cellular immunity in pigs.

Abstract: The influence of growth potential or growth path on the tenderness of the longissimus muscle was investigated using 117 Angus and Angus-cross bulls and steers raised on pasture over two successive years. Growth rate for a period of 100 d from a weight of about 200 kg was used to identify the faster-growing two-thirds of cattle within the gender groups, half of which were grown fast to a slaughter weight of 530 kg at 16 to 18 mo of age (the Fast group), whereas the other half were restricted in growth (the Restricted group) so they attained a similar final weight as the slower-growing third (the Slow group) at about 26 mo of age. The Restricted group was included to determine whether the tougher meat expected from the Slow group relative to the Fast group (based on previous results) was due to the greater age of the Slow group or to their slower early growth rate. Beef from the Fast group was tenderer than that from both the Slow and Restricted groups based on sensory panels (P < 0.05) and objective measures (P < 0.05), indicating that the early growth-rate potential was less important than the differences in age or the patterns of growth for the Slow and Restricted groups. Improved tenderness for the Fast group was associated with more intramuscular fat (P < 0.05) and higher myofibrillar fragmentation indexes (P < 0.05). Patterns of tenderness differences between treatment groups were similar for bulls and steers, but beef from bulls was tougher (P < 0.001) than that from steers. The more tender beef from steers was associated with a slightly lower ultimate pH (P < 0.001), higher myofibrillar fragmentation indexes (P < 0.001), and more intramuscular fat (P < 0.001). Ultimate pH affected beef tenderness (P < 0.01), but adjustments to a constant pH did not decrease differences between treatment and gender groups. The higher growth rates (P < 0.01) and leaner carcasses (P < 0.01) of bulls compared with steers were consistent with other studies. Increases in age of 8 to 10 mo may be associated with less tender beef for cattle finished on pasture, and beef from bulls is likely to be less tender than that from steers.

Abstract: The effects of reducing CP level in combination with an increase in ambient temperature (29 vs 22 degrees C) on performance and carcass composition were studied in a factorial arrangement of treatments involving 66 Pietrain x (Landrace x Large White) barrows from 27 to 100 kg BW. Animals were fed at each temperature one of three experimental diets that provided 0.85 or 0.70 g of digestible lysine per megajoule of NE, in the growing (27 to 65 kg) and the finishing (65 to 100 kg) phases, respectively. Diet 1 was a corn, wheat, and soybean meal diet formulated without crystalline AA; CP levels were 20.3 and 17.6% for the growing and the finishing phases, respectively. In Diets 2 and 3, CP level was reduced by substituting part of the soybean meal with corn and wheat (Diet 2), or with corn, wheat, and 4% fat (Diet 3). Diets 2 and 3 were supplemented with AA and balanced according to the ideal protein concept. The CP levels of Diets 2 and 3 were, respectively, 15.8 and 16.3% in the growing phase, and 13.4 and 13.8% in the finishing phase. Pigs were housed individually and had free access to feed and water. The ADFI was measured daily, and animals were weighed weekly. Carcass composition was measured at slaughter (100 kg BW). Increasing ambient temperature from 22 to 29 degrees C resulted in a 15% reduction in ADFI and 13% lower ADG. Leaner carcasses (P 0.05). At 29 degrees C, ADFI was not different (P > 0.05) between diets and daily NE intake was higher (P 0.05) but increased mainly fat deposition. These results indicate that a 4 percentage unit reduction of dietary CP level reduces N excretion (minus 37%) but does not affect growth and carcass composition as long as the ratio between essential AA and NE are kept optimal. In addition, diets with reduced CP limit the effect of high ambient temperature on ADFI. Finally, our results demonstrate the significance of using NE, rather than DE or ME, for formulating diets.

Abstract: Cows with two waves of follicular growth during the estrous cycle yield follicles that are older and larger at ovulation compared with cows having three waves. The objectives of the current research were 1) to compare fertility in cows with two or three follicular waves and 2) to examine associations between luteal function, follicular development, and fertility after breeding. Follicular waves were monitored by ultrasonography during the estrous cycle before insemination in 106 dairy cows. Fewer cows had three follicular waves before next estrus and ovulation than two waves (P < 0.01; 30% vs 68%, respectively), but pregnancy rate was higher (P = 0.058; 81 vs 63%, respectively). Cows with two waves had shorter estrous cycles (P < 0.01), with the ovulatory follicle being both larger (P < 0.05) and older (P < 0.01). In cows with three waves, luteal function was extended (P < 0.05) and the peak in plasma progesterone occurred later (P < 0.05) in the estrous cycle compared to two wave cows. Considering cows that became pregnant, luteal phase length was shorter (P < 0.05) during the estrous cycle preceding insemination than for nonpregnant cows. In conclusion, fertility was greater in lactating cows inseminated after ovulation of the third-wave follicle that had developed for fewer days of the estrous cycle as compared with two-wave cows.

Abstract: To assess the effects of creep feed consumption on individual feed intake characteristics and performance of group-housed weaned pigs, 16 litters (149 piglets) were fed a commercial creep feed (3,040 kcal NE/kg, 15.2 g lysine/kg) supplemented with 1% chromic oxide. Another five litters (48 piglets) were not given access to creep feed (no-feed). Piglets were weaned at 28 d after birth. On d 18, 22, and 27 of age, fecal samples from all the piglets were taken using fecal loops. A green color of the feces indicated that the piglet had eaten creep feed. Piglets that had green-colored feces three times were considered as eaters. Piglets that never showed green-colored feces were considered as non-eaters. At weaning 22 piglets of each type (no-feed, non-eaters, and eaters) were selected based on BW, litter origin, and sex. These 66 pigs were assigned to six pens equipped with computerized feeding stations. Eaters, non-eaters, and no-feed pigs were equally divided over all six pens. After weaning a prestarter (d 0 to 13) and a starter diet (d 14 to 34) were offered for ad libitum consumption. The individual feed intake characteristics of latency time (interval between weaning and first feed intake) and initial feed intake (intake during the first 24 h following first feed intake) and performance traits were determined for all piglets. The pigs that were designated as eaters needed less time between weaning and first feed intake than the pigs that were designated as non-eaters and no-feed pigs (P = 0.04 and P = 0.06, respectively). Initial feed intake was not affected (P > 0.1) by feed intake prior to weaning. However, during d 0 to 8 the eaters had more visits per day during which feed was consumed than both the non-eaters and no-feed pigs. Averaged over the first 8 d after weaning, the ADFI and ADG of the eaters were higher than that of the non-eaters and no-feed pigs (P < 0.05). Averaged over the total 34-d period the effect of creep feed intake on postweaning ADFI was much less pronounced (P = 0.20), whereas ADG of the eaters was the highest (P < 0.05). Creep feed intake during the sucking period stimulates early postweaning feed intake as well as postweaning performance.

Abstract: This study was performed with growing chickens (4 to 22 d of age) to evaluate the effects of feeding a rye-based diet supplemented with commercial enzyme preparation containing xylanase and beta-glucanase (Quatrazyme HP, Nutri-Tomen, France) on small intestine wall morphology, bile acid composition, nutrient digestibility, and bird performance compared with unsupplemented rye- or corn-based diets. The rye-based diet decreased (P < or = 0.05) weight gain, feed intake, and feed efficiency and increased water intake compared with the corn-based diet. Moreover, rye consumption reduced crude fat and protein digestibility as well as apparent metabolizable energy (P < or = 0.05). The small intestine wall showed that villus length, width, and surface were decreased in broiler chickens fed the rye-based diet compared with those fed the corn-based diet. However, crypt morphometry parameters were not affected by diet type. The concentration of conjugated bile acids in the small intestine contents of broiler chickens fed the rye-based diet was decreased (P < or = 0.05) compared with those fed the corn-based diet. These findings suggest that feeding a rye-based diet reduces villus capacity for nutrient absorption and bile acid capacity for fat solubilization and emulsification, resulting in decreased bird performance. The addition of xylanase and beta-glucanase to the rye-based diet improved (P < or = 0.05) weight gain, feed intake, and feed efficiency, and decreased water intake. The digestibility of nutrients and apparent metabolizable energy were also increased (P < or = 0.05). Addition of xylanase and beta-glucanase increased (P < or = 0.05) villus size and the villus height-to-crypt depth ratio, as well as the concentration of conjugated bile acids (P < or = 0.05) in the small intestine contents. Exogenous enzymes improved nutrient digestibility and broiler chicken performance, probably by improving the absorption capacity ofthe small intestine through increased villus surface and intestinal concentration of conjugated bile acids.

Abstract: Genetic variability and relationships among six native French cattle breeds (Abondance, Tarentaise, Villard de Lans, Montbeliarde, Limousin, and Charolais) and one foreign breed (Holstein) were investigated using 23 microsatellite markers. These breeds were also compared with four Swiss breeds genotyped in a previously published study. Interestingly, the French alpine breeds have smaller population sizes but showed higher genetic variability than the larger Holstein breed. Neighbor-joining trees and PCA (principal components analysis) showed that alpine breeds tend to cluster together. Abondance and Tarentaise breeds were closely related, whereas the Holstein was highly differentiated from all breeds analyzed. Two different assignment tests for determining the breed of origin of individuals were compared: "direct" and "exclusion-simulation" approaches. The exclusion-simulation significance test correctly assigns fewer individuals than the direct approach but provides a confidence level (e.g., P < 0.01) for each individual being assigned. Accurate assignment with high statistical confidence is required for animal traceability. Unfortunately, the accuracy of assignment greatly decreases as the threshold level of confidence of assignment increases (e.g., from P < 0.05 to P < 0.001). Assignment accuracy also greatly declines as the level of population differentiation decreases below the level often found between related breeds (e.g., F(ST) < 0.1).

Abstract: Conjugated linoleic acid (CLA), a mixture of isomers of linoleic acid, has many beneficial effects, including decreased tumor growth in animal cancer models. The cis-9, trans-11 isomer of CLA (CLA9,11) can be formed in the rumen as an intermediate in biohydrogenation of linoleic acid. Recent data, however, indicate that tissue desaturation of trans-fatty acids is an important source of CLA9,11 in milk. Our objective was to determine whether supplementing a high-corn diet with soybean oil (SBO; a source of linoleic acid) would increase concentrations of CLA in ruminal contents and tissue lipids. Four ruminally cannulated steers were utilized in a Latin square design with 28-d periods. A control diet (80% cracked corn, 2.0% corn steep liquor, 8.0% ground corn cobs, and 10% supplement [soybean meal, ground shelled corn, minerals, and vitamins]) was supplemented with 2.5, 5.0, or 7.5% (DM basis) SBO. Supplemental SBO did not affect ruminal pH or concentrations of the major VFA. The proportion and amount (mg FA/g DM ruminal contents) of CLA9,11 were not increased by increasing dietary SBO. However, the proportion and amount of the trans-10, cis-12 CLA isomer (CLA10,12) in ruminal contents increased linearly (P < 0.006) as dietary SBO increased. Trans-18:1 isomers in ruminal contents increased linearly (P < 0.02) as dietary SBO increased. The proportion of CLA10,12 was correlated positively (P < 0.001) with proportions of trans-C 18:1 isomers in ruminal contents. Conversely, CLA9,11 was correlated negatively (P < 0.05) with the proportions of trans-18:1 in ruminal contents. The same high-corn diet, supplemented with 0 or 5% SBO, was fed to 20 Angus-Wagyu heifers for 102 d in a randomized complete block design to determine the effect of added SBO on tissue deposition of CLA. Supplemental SBO did not affect feed intake, gain:feed, or carcass quality. Tissue samples were obtained from the hindquarter, loin, forequarter, liver, large and small intestine, and subcutaneous, mesenteric, and perirenal adipose depots. The concentration of CLA9,11 was greatest in subcutaneous adipose tissue but was not affected in any tissue by SBO. Supplementing high-corn diets with SBO does not increase CLA9,11 concentrations in tissues of fattening heifers. Research is needed to identify regulatory factors for pathways of biohydrogenation that lead to increased concentrations of CLA10,12 in ruminal contents when high-oil, high-concentrate diets are fed.
