Abstract: Spirulina microalgae (Spirulina platensis, Spirulina maxima, Spirulina fusiformis) is considered as a valuable additional food source of some macro- and micronutrients including high quality protein, iron, gamma-linolenic fatty acid, carotenoids, vitamins B1 and B2. In spite of Spirulina chemical composition varies widely when grown in open reservoirs its efficiency as an additional remedy in treatment and prophylaxis of different diseases is proved in a variety of experimental and clinical trials. During Spirulina cultivation in open reservoirs and especially in closed photobioreactors its biomass may be additionally enriched with some trace elements such as iron, iodine, selenium, zinc, copper, manganese and chromium in high bioavailable form. Said biomass is considered as a constituent of new bioactive food supplements.

Abstract: Antioxidant properties of 14 strains of lactic acid bacteria were evaluated in vitro using FRAP assay, inhibition of luminol oxidation in Hb-H2O2 system and inhibition of NADPH-Fe2+ induced microsomal lipid peroxidation. All strains demonstrated high reducing properties, but only L. casei spp. (including L. casei 114001) and L. fermentum ME-3 revealed pronounced ability to suppress oxidation of luminol (by 43-65,8%) and microsomal lipid peroxidation (by 57,9-89,5%). Either L. casei 114001 (10(8) CFU suspended in physiological solution) or fermented dairy drink containing equivalent amount of L. casei 114001 were daily administered orally to male Wistar rats. Antioxidant capacity of blood plasma, liver and intestines of animals elevated while MDA content in blood plasma decreased.

Abstract: Sociological poll of inhabitants of Chelyabinsk concerning a balanced diet was conducted. Every second chelyabinets needs change of the food, but thus has for this purpose no sufficient money resources. Deficiency in a food of animal protein, the majority of vitamins, macro- and microelements and saturation of a diet by carbohydrates and fats was shown. It was established that the products of mass consumption: bakery, dairy, meat,fat-and-oil products and sweets can be considered as potential products for enrichment, oriented for low-and middle-income countries primarily.

Abstract: Vitamin status of the working population (about 950 subjects) from Moscow region, Samara, Nizhny Novgorod, Arkhangelsk, Yamalo-Nenetsky Avtonomny Okrug has been evaluated in 2015-2016. The lack of vitamin D assessed by means of blood serum level determination was detected in 57.5% of the adults, B vitamins - in 12.6-34.5%, vitamins A and E - in 5.3-10.8%, carotene - in 67.3%. Multivitamin insufficiency (the lack of 3 or more vitamins) was found in 22-38% of adults. Micronutrient fortification of foods of mass consumption is a promising way to improve vitamin status of the population. The needs for vitamins in medical, food industry and agriculture are satisfied only by imports. Calculation of the quantity of imported vitamins substances, carried out on the basis of databases of the Federal Customs Service of Russia, showed that import volume of vitamins increased and amounted to 9920 tons (125 980 000 dollars) in 2016. The estimated total demand of food industry in vitamins (substances) for the production of vitamin-mineral supplements (at the rate of 1-month course per person per year), the inclusion of vitamin and mineral supplements in health nutrition in hospitals and the production of fortified foodstuffs (at the rate of 24 kg of flour per year per one person and milk - 50 kg/year per person) was about 2.5 thousand tons per year. The absence of vitamin synthesis in the Russian Federation is a problem for increasing of nutritive value and quality of food products. The urgent need to revive domestic production (synthesis) of vitamin substances has appeared. The use of iodized salt instead of noniodized salt in bread and bakery production automatically converted it into enriched foods, which could improve the iodine sufficiency of the population.

Abstract: The nutritional value and functional properties of flaxseed Linum Usitatissimum L. are analyzed. There are three groups of compounds in the flaxseeds, characterized by specific biological activity and functional properties: PUFA omega-3 family, soluble dietary fiber in the form of mucus, and lignans, which have phytoestrogen properties. Data on the chemical composition of flaxseed, obtained from various sources, are characterized by high variability. The flaxseeds contain 35-45% oil, which contains 9-10% of saturated fatty acids (palmitic and stearic), about 20% monounsaturated fatty acids (mainly oleic acid), and more than 70% alpha-linolenic fatty acids acid. The protein content in seeds of flax varies from 20-30%. Proteins of flaxseeds are limited by lysine, but are characterized by a high coefficient of digestibility (89,6%) and biological value (77,4%). The content of dietary fiber reaches 28% by weight of whole seed, with the ratio of soluble and insoluble fractions from 20:80 until 40:60. According to the content of B-group vitamins and some minerals flaxseeds are close to the crops. Vitamin E in the flaxseeds is mainly in the form of gamma-tocopherol (9,2 mg/100 g of seeds). Flaxseed is the richest in the vegetable world source of lignans (up to 0,7-1,5% of dry weight of seed), among which prevails secoisolariciresinol diglucoside. The chemical composition of flaxseed has identified areas in the study of preventive and functional properties. PUFA omega-3 family, dietary fibers and phytoestrogen lignans determine hypolipidemic and antiatherogenic actions of flaxseed. Flax seeds under the conditions of storage and processing technologies are harmless food product. Consumption of 50 g/day of flaxseed showed no adverse effects in humans.
