Abstract: Aus Piper nigrum werden drei neue Nebenalkaloide isoliert. Das „Chavicin”, das bisher als Geschmackstrager des Pfeffers angegeben wurde, ist kein cis.cis-Piperin, sondern ein Gemisch aus Piperin und verschiedenen Nebenalkaloiden; cis.cis-Piperin kann im Pfeffer nicht nachgewiesen werden. Samtliche cis-trans-isomeren Piperinsauren und ihre Piperidide werden synthetisiert. Ihre Eigenschaften beweisen ebenfalls, das das „Chavicin” der alteren Literatur kein Isomeres des Piperins gewesen sein kann. Der scharfe Geschmack des Pfeffers wird durch Piperin verursacht.
