Abstract
The use of gastronomy on the touristic attraction supplies the shaping of a positive image and appreciation of the culture and identity on the communities. It was aimed through this research to analyze the role of gastronomy in the quality and competitiveness on touristic destinations. So, it was considered Castro town as the case of the study. The methodology used for the study was a analytic descriptive study that tried to establish conceptual questions and identify the food on society. As a result of the research it’s considered that the quality is a fundamental key on the use of gastronomy as a touristic attraction, and besides, it can be the differentiation and competitiveness among places of touristic destinations. It was possible to find that in Campos Gerais PR, particularly in Castro town, the regional gastronomy town became a differential, because gastronomic tourism is related to these differences between the culture and the society of the region.
