Why orange juice get sour?
4 answers
Orange juice can become sour due to various factors, including the presence of pathogens, the degradation of ascorbic acid, and the influence of certain processing techniques. The survival and growth of pathogens such as Salmonella Typhimurium and Listeria monocytogenes in sour orange juice, especially under certain temperature conditions, can impact the juice's flavor profile, potentially making it sour. Additionally, the degradation of ascorbic acid, a key component of orange juice, is influenced by storage temperatures and processing methods such as electroreduction and electro-oxidation treatments. Electro-oxidation, in particular, can lead to an increase in non-enzymatic browning reactions, which are associated with a sour-bitter aftertaste. The incorporation of traditional Chinese medicine powders into orange juice, aiming to enhance its health benefits, can also alter the juice's taste, potentially making it sour due to the inherent flavors of the added ingredients. Furthermore, the thermal degradation of thiamin in orange juice has been shown to produce potent off-flavors, including compounds that contribute to a sour taste. The preparation methods for sour mandarin orange juice beverages, which involve steps like enzymolysis and debitterizing, are designed to mitigate sourness, bitterness, and acerbity, indicating that these are recognized issues in citrus juice production. Moreover, the presence of hydroxycinnamic acids and other secondary metabolites in the peel and pulp of oranges affected by Huanglongbing (HLB) disease can contribute to a distinctly sour and bitter flavor in orange juice. The physicochemical properties of juice, such as pH and acidity, are crucial in determining its flavor profile, with adjustments in the formulation of noncarbonated orange juice with lemon showing how these parameters can be manipulated to achieve a desired taste. In summary, the sourness of orange juice can result from microbial growth, chemical degradation processes, the addition of certain ingredients, and specific juice processing techniques, all of which can significantly impact the juice's flavor profile.
