Abstract: Purple rice is a functional food with health benefits and industrial potentials. In northern Thailand, purple rice landraces are grown either as wetland or upland rice, in the lowlands and highlands, in small amounts along with the staple rice. This study examined diversity of 37 accessions of purple rice collected from farmers with InDel cytoplasm markers for subspecies differentiation, 16 SSRs markers for within and between accessions variation, and selected grain quality features, namely, anthocyanin, iron, zinc, and gamma oryzanol content, when grown together as wetland rice. Most of the purple rice, originally grown as upland rice in both the lowlands and highlands, were identified as tropical japonica, except the wetland accessions from the lowlands that almost all belonged to the indica group. A high degree of genetic differentiation was found between the upland and wetland ecotypes, but none between those from the lowlands and highlands. A highland origin of the purple upland rice populations in the lowlands, possibly with adaptation to the upland rice cultivation of the tropical japonica, is suggested by the close genetic affinity between the highland and lowland populations of the upland ecotype. Grown in a much smaller area than the staple unpigmented rice, purple rice landraces are also less diverse genetically. Identification of purple rice landrace populations with exceptional anthocyanin and gamma oryzanol contents demonstrates that purple rice landraces can be a source of agronomically useful traits, while being an important cultural heritage, and contributing to the genetic diversity of the local rice germplasm.

Abstract: In order to enrich the cookies' nutrition, black soybean was used to develop cookies, and the effect of its particle size on the characteristics of cookies was analysed. The results showed that the chemical score of black soybean cookies (12.02–13.24) was significantly greater than that of wheat flour cookies (9.14), which was significant for improving cookies’ nutrition. The cookies thickness decreased when the particle size of black soybean flour decreased, but the spread ratio increased. The addition of black soybean flour greatly decreased the lightness of the cookie from 74.79 to 51.32. The decrease in particle size affected texture of cookies, especially for hardness and fracturability, they increased from 12.22 to 13.86 N, and decreased from 1.26 to 1.02 g, respectively. The addition of black soybean remarkably increased the slowly digestible and resistant starch, especially for cookies made from coarse black soybean flour, up to 50.22% and 26.10%, respectively. The black soybean flour enhanced the binding force of free water in cookies system, giving cookies a higher crispness. Based on physicochemical properties and nutrition analysis, using black soybean flour to develop cookies is feasible in industrial practice. And from sensory analysis, superfine black soybean flour was preferred for cookies production.

Abstract: Drought stress is a factor that affects plant growth and development, both in terms of morphology, anatomy, and physiology. Mutant Oryza sativa L. strain 51 of Cempo Ireng cultivar as the result of gamma-ray irradiation is superior mutant black rice strain which has a faster planting period of 10-20 days than its control and shorter plant height. This study aims to determine the morphological, anatomical, and physiological responses, especially the proline content inside the leaves of mutant black rice strain 51. The study used a completely randomized design (CRD) with the treatment of drought stress using PEG 6000 in Yoshida liquid media. The seedlings were planted for 21 days in untreated media, then treated for 14 days. Observation of morphological characters was carried out by measuring plant height, root length, leaf area, and plant biomass. Observations of anatomical characters were carried out by observing the cross-section of the root. Observation of physiological character was carried out by measuring leaf proline levels. The results showed that drought stress with PEG 6000 inhibited the growth and development of mutant rice strain 51. Drought stress reduces plant height, root length, leaf area, plant biomass and the area of root aerenchyma. Proline leaf content increased significantly at a PEG concentration of 30%. Mutant rice strain 51 showed a tolerant response to drought stress with the significant increased of proline, the increased of root stele diameter and the constant number of metaxylem.
