Abstract: The black rice farming is potential to be developed in Indonesia for several reasons, for instance it is a rare local varieties, has many health benefit, high value, and feaseable to be developed based on farming analysis. Magelang regency is a region that has original varieties of black rice. The development of black rice farming was supported by Association of Sawangan Organic Farmers. This study applied internal and external environment analysis and formulated strategy using SWOT analysis, and then the priority strategy was chosen by weighting it based on SWOT analysis framework (A’WOT). Result showed that certified organic product was the most important factor on strength while the decreasing number of black rice farmer was the weakness. Furthermore, increasing people awareness on healty food was the opportunity and the threat was black rice has not been widely known in public. The priority alternative strategy that can be applied by Association of Sawangan Organic Farmers to develop black rice farming is to build a sustainable business partner.

Abstract: Black rice has been reported to contain many bioactive compounds, protein, crude fiber, total carbohydrates and minerals with attractive purple color making it valuable component in dairy industries. Partial replacement of dairy ingredients by 2-6% black rice powder (BRP) to make functional processed cheese spreads (PCS) was investigated. Chemical composition, microbiological, rheological characteristics, total phenolic compounds (TPC), antioxidant activity (AA) and sensory evaluation of PCS were determined. Results showed that no significant difference was observed in dry matter and fat content between PCS and control sample however, the protein content was significantly decreased by addition of BRP. Adding different ratios of BRP in PCS increased the TPC and AA than control sample as fresh and throughout the cold storage period. Furthermore, fortification with BRP significantly affected the rheological characteristics of PCS. Inclusion of black rice powder at different concentrations in the PCSs mix had no noticeable effect on the microbiological quality. Sensory evaluation results revealed that using 2% BRP in PCS processing had higher acceptability compared with control sample. Thus, BRP could be incorporated in PCS to develop a product with acceptable functional, nutritional and sensory properties.

According to the invention, the method, the system and the apparatus herein by using computer vision, detects rice grains that are stuck together in the rice grain image, accurately segments the stuck rice grains in the image, can be better applied to technologies for detecting the quality of rice, and increases detection accuracy.

CONSTITUTION: Nutritive grains and a manufacturing method thereof comprises the steps of: washing grains; coating the surface of the washed grains with glutinous rice paste having calcium and sea-salt; first coating the surface of the coated grains with ginseng extract; first drying the ginseng extract coated grains by hot-air; second coating the dried grains with olive oil; second drying the olive oil coated grains by hot-air; and packaging the dried grains to ship. The grains include rice, brown rice, sweet rice, nonglutinous rice, black rice, polished barley, beans and miscellaneous cereals.
