Abstract: Effects of rice cultivars and degree of milling (DM) on composition, pasting properties, total phenolic contents, and distribution of phenolic acids were investigated. Rice and bran fractions with 94.4, 92.0, and 90.4% milling yields from brown rice of four cultivars (Odae, Nampyung, Chucheong, and Ilmi) were used. Fat and ash contents of milled rices decreased with increasing DM, whereas protein contents were not affected. In rice bran, differences in fat and ash contents by cultivars were higher than those caused by DM. With increasing DM, gelatinization temperature of rice flour decreased, whereas peak viscosity and hold viscosity at 95 o C increased. While cold viscosity, final viscosity, and setback varied among cultivars, DM had little effect. Total polyphenolic contents in brown rice, milled rice, and rice bran were 93.9-88.8, 30.3-71.9, and 310.0-541.6 mg catechin eq/100g, respectively. Major phenolic compounds were identified as ferulic and p-coumaric acids. Total phenolic content of brown rice (65.9-27.9 mg%) decreased with increasing DM, whereas ratio of ferulic acid composition increased. Chucheong and Ilmi varieties showed biggest reduction of phenolic acid contents by milling. In rice bran, ferulic and p-coumaric acids were 157.8-240.2 and 31.8-90.4 mg%, respectively. Contents of sinapinic, benzoic, and m-hydroxybenzoic acids in rice bran were higher than those of brown and milled rices.

Abstract: QuEChERS sample preparation was optimized and validated using solvent extraction with 10% (v/v) acetic acid-containing acetonitrile in the presence of four salts (anh. MgSO4, NaCl, sodium citrate tribasic dihydrate and sodium citrate dibasic sesquihydrate) and dispersive solid-phase extraction with mixed sorbents (octadecylsilane, primary and secondary amine and silica sorbents) for an ultra high performance liquid chromatography-tandem mass spectrometric determination of nine mycotoxins in brown rice: aflatoxins (AFB1, AFB2, AFG1 and AFG2), fumonisins (FB1 and FB2), deoxynivalenol, ochratoxin A and zearalenone (ZON). Our developed method allows for the determination of trace levels of mycotoxins with method detection limits in the range of 1.4-25 µg/kg, below the maximum limits of EU regulations, and with an acceptable accuracy and precision, and recoveries in the range of 81-101% with relative standard deviations of 5-19% over a mycotoxin concentration range of 5.0-1,000 µg/kg. Six out of fourteen real samples of brown rice were found to be contaminated with at least one of these mycotoxins, ranging from 2.49-5.41 µg/kg of FB1, 4.33 ± 0.04 µg/kg of FB2 and 6.10-14.88 µg/kg of ZON.

Abstract: Brown rice, which is a less allergenic food grain and contains essential amino acids, was hydrolysed by bromelain and PROTEASE FP51® to improve its functionalities and taste for food applications. The hydrolysate prepared by bromelain (eb-RPH) had high protein solubility, surface hydrophobicity, low molecular weight peptides, hydrophobic amino acids (leucine, valine and glycine) and flavor amino acids (glutamic acid and aspartic acid). The eb-RPH exhibited higher 1,1-diphenyl-2-picrylhydrazyl (DPPH˙) and 2,2'-azino-bis 3-ethylbenzthiazoline-6-sulfonic (ABTS˙(+)) radical-scavenging activities of 76.62% and 52.96%, respectively, and possessed a better foaming capacity (221.76%) and emulsifying capacity (32.34%) than the hydrolysate prepared by PROTEASE FP51® (ep-RPH) did. The eb-RPH gave the desired taste, which is attributed to volatile flavor compounds (benzaldehyde, benzeneacetaldehyde and 2-acetyl-1-pyrroline) and non-volatile flavor compounds, such as monosodium glutamate, 5'-guanosine monophosphate and 5'-inosine monophosphate (0.07, 0.03 and 0.05 mg mL(-1), respectively). Brown rice peptides generated by bromelain were novel bioactive peptides with multifunctional properties.

Abstract: Silicon (Si) is an essential nutrient for rice, but its effects on the yield and quality of rice under heavy metal stress remain uncertain. In this study, two typical paddy soils (acidic and calcareous purple soils) in the western region of Chongqing were selected for field plot experiment, with the purpose of understanding the effects of Si implementation methods on grain yields and cadmium (Cd) uptake, transport, and accumulation in the grain of a hybrid rice (Oryza sativa L, Changliangyou 772). Four treatments were set for the purposes including soil-based Si application, foliar spray of Si alone, foliar spray of selenium (Se)-containing Si fertilizer, and a control without Si application, respectively. The results indicated that the Si applications reduced Cd contents in brown rice by 11.45~51.85% in the slightly Cd-contaminated acidic purple soil (pH = 4.77, soil total Cd content 0.413 mg kg-1) and 26.93~43.77% in the purple calcareous paddy soil (pH = 7.77) with similar Cd-polluting levels. It is worth noting that the Cd content of conventional fertilized rice exceeds the Chinese National Food Safety Standard limit (0.2 mg kg-1, GB2762-2017) in the slightly Cd-contaminated acidic purple soil, and foliar spray treatments showed most effective effects that meets the safety threshold standard. Soil-based Si application reduced Cd accumulation in rice grains mainly by inhibiting the translocation of Cd from stem to the rice grain or root to stem, while foliar sprays of Si mainly by inhibiting the translocation of Cd from stem to brown rice. Si applications increased the rice yield by 17.15 to 25.45% in calcareous paddy soil with foliar spray being the best, while no significant yield increase was found in acidic paddy soil. Si and Se-containing Si fertilizer improved the nutritional quality of rice grain as indicated by the increases of Se, Si, and protein contents and the significant decreases of Cd contents in the rice grains. The comprehensive effects in improving the rice quality follow the order of foliar spray of Se-containing Si fertilizer > foliar spray of Si alone > soil-based Si application. Thus, foliar spray Si-containing fertilizer could be helpful in increasing rice yield while reducing the Cd uptake in rice grains, which might be a feasible approach in controlling Cd entry into the human body via crops.

Abstract: The current study was employed to assess the influence of the different extraction methods on total tocols, γ-oryzanol content, and antioxidant properties of Chiang Mai Black rice, Mali Red rice, and Suphanburi-1 Brown rice bran oil. Rice bran oil (RBO) was extracted by Hexane, Hot pressed, Cold pressed, and Supercritical Fluid Extraction (SFe) methods. High yield of RBO was extracted by hexane and SFe methods. Total and subgroups of tocols, and γ-oryzanol content were determined by HPLC. The hexane extracted sample accounts for high content of γ-oryzanol and tocols. Besides, all of RBO extracts contain a significantly high amount of γ-tocotrienol. In vitro antioxidant assay results indicated that superior quality of oil was recovered by hexane extraction. The temperature in the extraction process also affects the value of the oil. Superior quality of oil was recovered by hexane extraction, in terms of phytochemical contents and antioxidant properties compared to other tested extraction methods. Further, thorough study of factors compromising the quality and quantity of RBO recovery is required for the development of enhanced functional foods and other related products.
