TL;DR: The composition of potato starch and guar gum based biodegradable composite film was optimised based on physical, optical, mechanical and barrier properties and the structural characterisation of the optimised film was analysed by FESEM and XRD which point to the semi-crystalline nature of the developed film.

Abstract: :
Xanthan gum is an extracellular polysaccharide secreted by the micro-organism Xanthomonas campestris. Commercially it is manufactured by a fermentation process. Xanthan gum is soluble in cold water and solutions exhibit highly pseudoplastic flow and synergistic interaction with galactomannans. An overview of the manufacturing process and chemical structure of xanthan gum is given. Methods for the effective preparation of xanthan gum solutions are described with particular emphasis on dispersion. The effects of food ingredients such as salts, sugars, and acids on solution properties are discussed in relation to the main applications. The synergistic interaction of xanthan gum with galactomannans such as guar gum, locust bean gum and konjac glucomannan is discussed. Finally, the main applications of xanthan gum in food are described with example formulations.

TL;DR: In this article, a self-assembling self-healing hydrogel based on guar gum (GG)-based selfassembling hydrogels is presented, which takes advantage of the formation of cyclic acetals between the vicinal hydroxyl groups and carbonyl groups, as introduced via the regioselective oxidation of GG using NaIO 4.
