Abstract: In recent years, attempts to improve the economic and environmental sustainability of both tourism and agriculture have been linked to the development of “alternative” food networks and a renewed enthusiasm for food products that are perceived to be traditional and local. This paper draws on research from two UK regions, the Lake District and Exmoor, to argue that local food can play an important role in the sustainable tourism experience because it appeals to the visitor's desire for authenticity within the holiday experience. Using evidence from qualitative interviews with tourists and food producers, the paper records ways in which local foods are conceptualised as “authentic” products that symbolise the place and culture of the destination. Abstract: Sustainable tourism has become an increasingly popular field of research since the late 1980s. However, the sustainable tourism debate is patchy, disjointed and often flawed with false assumptions and arguments. This paper is a brief critique of some of the weaknesses in the sustainable tourism literature. In particular, it explores six issues that are often overlooked but must be addressed in research: the role of tourism demand, the nature of tourism resources, the imperative of intra-generational equity, the role of tourism in promoting sociocultural progress, the measurement of sustainability, and forms of sustainable development. Finally, it is argued that in order to transform research on sustainable tourism to a more scientific level, a systems perspective and an interdisciplinary approach are indispensable.

Abstract: The topic of sustainable tourism has emerged in the last decade as a result of discussions from the report Our Common Future. This paper reviews the development of the term, beginning with a discussion of the confusion arising from the imprecise and conflicting definitions of the concept, and the need to distinguish between sustainable tourism and the development of tourism on the principles of sustainable development. The paper then reviews the environmental focus of discussions of sustainable tourism and argues for the need to ensure that the concept includes and is applied to the human environment as well as the physical environment. Attention then shifts to problems of carrying capacity, control of tourism development, and the relevance of the term to mass or conventional tourism. The paper concludes with a discussion of the future direction of sustainable tourism and the likelihood of development moving in this direction.
