Journal ArticleDOI
Natural ‘capsule’ in food plants: Cell wall porosity controls starch digestion and fermentation
TL;DR: In this article, a mini-review summarizes the recent studies about how cell walls impact on the digestibility and fermentability of encapsulated macronutrients (especially starch), and the reductionist approach using isolated individual plant cells (as a model) reveals important aspects of nutritional functionality.
Journal ArticleDOI
High amylose wheat starch structures display unique fermentability characteristics, microbial community shifts and enzyme degradation profiles
Alexander T. Bui,Barbara A. Williams,Emily C. Hoedt,Mark Morrison,Deirdre Mikkelsen,Michael J. Gidley +5 more
TL;DR: Findings suggest that any HAW starch incorporated into high RS food products would be expected to have beneficial microbiota-mediated effects in terms of fermentation kinetics and end products.
Journal ArticleDOI
Wheat-based food form has a greater effect than amylose content on fermentation outcomes and microbial community shifts in an in vitro fermentation model
Alexander T. Bui,Barbara A. Williams,Nida Murtaza,Allan Lisle,Deirdre Mikkelsen,Mark Morrison,Michael J. Gidley +6 more
TL;DR: In this article, the effects of food form on the large intestinal digestion of products with different amounts of resistant starch are unknown, and the results showed that food form rather than initial amylose content significantly affected both fermentation rates and short chain fatty acid (SCFA) production.
