Journal ArticleDOI

Development of ovalbumin-pectin nanocomplexes for vitamin D3 encapsulation: Enhanced storage stability and sustained release in simulated gastrointestinal digestion

TL;DR: It is demonstrated that protein-polysaccharide complexes can effectively encapsulate VD3 and achieve the goal of sustained release in the simulated gastrointestinal tract, which have potential applications in food and medicine.
Journal ArticleDOI

Explore the reaction mechanism of the Maillard reaction: a density functional theory study

TL;DR: Calculations reveal that the TS3 in Amadori rearrangement reaction is the rate-determining step of Maillard reaction with the activation barriers of about 66.7 and 68.8 kcal mol-1 in the gaseous phase and aqueous solution, respectively.
Journal ArticleDOI

Pd‐catalyzed bicyclization of 2‐alkynylhalobenzenes and propargylic alcohols for the formation of indeno[1,2]furans: a DFT study

TL;DR: In this article, the mechanism of palladium-catalyzed bicyclization of 2-alkynylhalobenzenes and propargylic alcohols for the formation of indeno[1,2]furans has been studied computationally with the aid of density functional theory.
