Temperature-dependent complexation between sodium caseinate and gum arabic
TL;DR: In this article, the authors investigated the complex formation between sodium caseinate and gum arabic as a function of temperature using dynamic light scattering, fluorescence and NMR, and found that at neutral pH, the turbidity and particle size increased when the mixture was heated in situ at temperatures above a critical temperature.

TL;DR: In this article, an alternative approach to electrostatic interaction to generate a biopolymer complex surface layer on emulsion droplets was reported, which was considered to be due to hydrophobically driven complexation between sodium caseinate (CN) and the protein fraction of GA.
