A rapid method for measuring gas production during incubation of feedingstuffs with rumen liquor in vitro is described. Gas production in 24 h from 200 mg feed dry matter was well correlated with digestibility of organic matter, determined in vivo with sheep. Multiple regression analysis, when it included data from proximate analysis, resulted in an equation ( R = 0·98) for prediction of metabolizable energy content, based on 30 experiments with rations varying in protein and crude fibre content, and 59 other experiments with concentrates. Energy content was in the range of 7·7–13·2 MJ ME/kg D.M. ( ± S.D. = 11·17 ± 1·08). The residual standard deviation of the equation was 0·25 MJ. Gas production was measured in calibrated syringes. The only chemical determinations needed are dry matter, protein and fat. Differences in activity between batches of rumen liquor are corrected by reference to gas production with standard feedingstuffs (hay meal and maize starch).

The article gives an overview of phytic acid in food and of its significance for human nutrition. It summarises phytate sources in foods and discusses problems of phytic acid/phytate contents of food tables. Data on phytic acid intake are evaluated and daily phytic acid intake depending on food habits is assessed. Degradation of phytate during gastro-intestinal passage is summarised, the mechanism of phytate interacting with minerals and trace elements in the gastro-intestinal chyme described and the pathway of inositol phosphate hydrolysis in the gut presented. The present knowledge of phytate absorption is summarised and discussed. Effects of phytate on mineral and trace element bioavailability are reported and phytate degradation during processing and storage is described. Beneficial activities of dietary phytate such as its effects on calcification and kidney stone formation and on lowering blood glucose and lipids are reported. The antioxidative property of phytic acid and its potentional anticancerogenic activities are briefly surveyed. Development of the analysis of phytic acid and other inositol phosphates is described, problems of inositol phosphate determination and detection discussed and the need for standardisation of phytic acid analysis in foods argued.

Zusammenfassung
Eine vergleichende in vitro-Untersuchung zur Fermentation von energiereichen Zulagen im Pansen

Eine Methode zur Inkubation von Futtermitteln mit Inoculum aus Panseninhalt (Menke et al. 1979) wurde eingesetzt, um Fermentationsraten von Weizen, Gerste, Tapioka, Sorghum, Hafer, Roggen, einer Konzentratmischung, Heu und Haferstroh zu bestimmen. Wahrend der Inkubationsdauer von 96 Stunden wurde die Gasproduktion in verschiedenen Zeitintervallen gemessen. Die Fermentationsrate (k) wurde mittels nichtlinearer Regression geschatzt, wobei mathematische Modelle mit und ohne anfanglicher Verzogerung (1) der Fermentation verwendet wurden. Die Schatzwerte fur k variierten zwischen 0,024 und 0,140 bzw. 0,035 und 0,135 wenn das Modell die Verzogerung ein- bzw. ausschlos. Es werden Probleme diskutiert, welche sich im Zusammenhang mit der Schatzung und Interpretation von 1 sowie deren Einflus auf Schatzungen von k ergeben. Die Anwendung von k- und l-Werten zur Vorhersage der Pansenverdauung werden ebenfalls diskutiert.

Zusammenfassung

In in vitro Untersuchungen wurde ein pH-Optimum von 5 fur die Aktivitat der Phytase aus Weizen und Mais bestimmt. Die Aktivitat der Maisphytase betrug ca. 6% der Weizenphytase. Weizenphytase hydrolysierte Maisphytat im selben Umfang wie Weizenphytat. Ca6-, Na12- bzw. Zn6-Phytat wurden durch Weizenphytase im Verhaltnis 1,0:0,7:0,3 hydrolisiert. Zn2+ (0,06–0,612 mmol/l), Ca2+ (29 mmol/l) und Pepsin (3,5–35 000 mmol/Tyrosin/min) hemmten den Substratumsatz der Weizenphytase. Aus den Untersuchungen wird abgeleitet, das die pflanzlichen Phytasen, insbesonders in Diaten mit hohem Ca-Gehalt, nicht allein den Umfang der gastrointestinalen Phytathydrolyse bestimmen konnen.

Vergleichende Untersuchung an Ratten und Schweinen zur Verwertung von Phosphor aus Weizen-, Gerste- und Maisdiaten



In einem 3-wochigen Versuch mit 36 wachsenden mannlichen Ratten (97 g) und in einem 4-wochigen Versuch mit 18 kastrierten wachsenden mannlichen Schweinen (16 kg) wurde die Fahigkeit berder Spezies zur Verwertung von Phosphoraus Weizen-, Gerste- und Maisdiaten verglichen. Die Versuchsdiaten enthielten dieselben Gehalte an Calcium (0.51–0.52%), Phytat-(0.14–0.20%) und Gesamipaosphot (0.33 0.15%), letzteren auf einem marginalen Niveau. Wahrend die Ratten der, Gesamtphosphor aller drei Getreidediaten in vergleichbarer Hohe absorbierten und verwerteten, traten bei den Schweinen signifikante Unterschiede auf. Die Tiere der Weizengruppe absorbierten den Phosphor gleich gut wie die Ratten. wiesen aber eine geringere Verwertung auf. In den Gerste- und Maisgruppen wurde der Phosphor signifikant schlechter absorbiert und verwertet Die bessere Absorption des Getreidephosphors bei den Ratten ist im Wesentlichen auf die bessere Fahigkeit dieser Tiere zur Phytatspaltung in Magen und Dunndarm zuruckzufuhren. Die Ergebnisse werden im Zusammenhang mit den hoheren pH-Werten im Magen und der langsameren Futterpassage im Magen und Dunndarm der Ratten, sowie anderen aus der Literatur bekannten Aspekten diskutiert.
