Changes in food caused by deep fat frying--a review.
TL;DR: The purpose of this study was to review literature findings on changes in food caused by the frying process, and to identify potentially toxic compounds developed in the oxidized oil.
Journal ArticleDOI
Effects of the extraction conditions on the yield and composition of rice bran oil extracted with ethanol-A response surface approach
Ramon Antônio Oliveira,Vinícius Oliveira,Keila Kazue Aracava,Christianne Elisabete da Costa Rodrigues +3 more
TL;DR: In this paper, a rice bran oil was extracted from rice brans by solvent extraction using ethanol and the influence of process variables, solvent hydration (0 −24% of water, on mass basis), temperature (60 −90°C), solvent-to-rice bran mass ratio (2.5 : 1 to 4.5: 1) and stirrer speed (100 −250 ǫ) were analysed using the response surface methodology.
Journal ArticleDOI
Thermodynamic and statistical analysis of soybean oil extraction process using renewable solvent
TL;DR: In this article, the authors evaluated the thermodynamic parameters of the soybean oil extraction process using ethanol as solvent and showed that the results indicate that the extraction process with ethanol is feasible and spontaneous, mainly under higher temperature.
Journal ArticleDOI
Corn germ-bran oils extracted with alcoholic solvents: Extraction yield, oil composition and evaluation of protein solubility of defatted meal
Sandra Lorena Blandón Navarro,Maria Carolina Capellini,Keila Kazue Aracava,Christianne Elisabete da Costa Rodrigues +3 more
TL;DR: In this paper, the authors evaluated the performance of corn germ-bran oil with ethanol and isopropanol solvents at temperatures from 50 up to 80 degrees C. The results showed that the oil and carbohydrate extraction yields are influenced by the type and hydration level of the solvent and temperature, while this last variable has not shown influence on liquid holdup.
Journal ArticleDOI
Fractionation of lemon essential oil by solvent extraction: Phase equilibrium for model systems at T = 298.2 K
Cristina Chiyoda Koshima,Maria Carolina Capellini,Ivana Morais Geremias,Keila Kazue Aracava,Cíntia Bernardo Gonçalves,Christianne Elisabete da Costa Rodrigues +5 more
TL;DR: In this article, a quaternary mixture composed of limonene, γ-terpinene, β-pinene and citral was used to simulate lemon essential oil, and the experimental data were correlated using the NRTL and UNIQUAC models.
