TL;DR: In this article, the authors analyzed the effects of the growth temperature of mungbean sprouts (15~30±1℃) on the yield ratio, content of phenolic compounds and DPPH (1,1-diphenyl-2-picrylhydrazyl), ADH (alcohol dehydrogenase), ALDH (aldehyde dehydrogenases) activities of the sprouts.
