Chlorophyll is the primary source of color in widespread green plants. It has been investigated in mung bean seed coats and cotyledons. This study aimed to examine chromatic changes in mung beans during heat processing. It observed pigment variation within the cotyledons and seed coats of mung beans. Following thermal treatment from 0 to 50 min, the color of mung bean products changed, primarily from a decrease in chlorophyll content in the seed coat (from 6.57 to 1.28 mg/100 g, with significant differences. p < 0.05), accompanied by the formation of tawny pheophytin. However, the b value of mung bean seed coat showed an increasing trend with significant differences (yellowness, 21.55 increasing to 34.85, p < 0.05). Interestingly, the total flavonoid content in the seed coat tended to increase with thermal time (2.93 to 18.74 µg/mg) with statistical differences (p < 0.05). The condensation reaction of flavonoids with other polyphenolic compounds formed dark-brown polymers, resulting in a significant decrease in brightness (L value) of the cooking solution with thermal processing time (p < 0.05). Thus, the chlorophyll extraction and purification of the mung bean seed coat confirmed the morphological change of chlorophyll combined with the Maillard reaction, resulting in the color change after thermal treatment. It showed that a significant reason for the discoloration of mung beans was pheophytin from chlorophyll in the processing process.

Effect of Heat Treatment on Nutritional and Chromatic Properties of Mung Bean (Vigna radiata L.)

Widely used in traditional medicine in Asia and recently introduced in Burkina Faso under the name Beng-tigré, mung bean is a legume consumed throughout the world and more so in India. The objective of this study was to evaluate the cytotoxicity of the mung bean grown and consumed in Burkina Faso and to study its biological properties such as anti-inflammatory and anticancer activity of the natural and sprouted seeds. The cytotoxicity of the extracts was tested on Artemia salina larvae, and the anti-inflammatory activity was evaluated in vitro by albumin denaturation method using diclofenac as reference molecule. The anticancer activity of hydro-ethanol extracts was evaluated on rats made cancerous with 1,2-dimethylhydrazine (DMH) using 5-fluorouracil as reference molecule. The results showed that the highest yield of the plant extraction was observed with the hydro-ethanol solvent, both for the natural form of mung bean (MBN) and for its sprouted form (MBG). The cytotoxicity test showed no toxicity of the extracts toward shrimp larvae. The ethanolic extract of germinated mung bean seeds gave the highest anti-inflammatory activity at 95.13 ± 0.22% inhibition with significant difference (p < 0.05) between the extracts. Cancer induction with DMH was inhibited by both MBN and MBG extracts. The test of preventive effects of the extracts showed the best activity with significant difference in biochemical results. These results confirm that the mung bean grown in Burkina Faso, as a nontoxic legume, is a functional food that can be integrated into the population's dietary habits for a double interest. Moreover, they open perspectives for the research of active principles of plant origin with anti-inflammatory and anticancer properties.

Anti-Inflammatory and Anti-Colon Cancer Activities of Mung Bean Grown in Burkina Faso

Legumes and pulses are important food components with various phytochemicals and health benefits. However, the health-related bioactivities of some underutilized species remain uninvestigated. To breed a new bean lineage with particular health-related properties, this study investigated phenolics (specifically, isoflavones) and the in vitro inhibitory activities of the enzyme relevant to some non-communicable diseases in underutilized cultivars of Phaseolus lunatus (lima beans), compared to the commonly consumed P. vulgaris (red kidney bean) and beans in the Glycine and Vigna genera. The results indicated that soybeans in the Glycine genus contained the highest isoflavone contents, especially glycitein (1825–2633 mg/100 g bean) and daidzein (1153–6471 mg/100 g bean), leading to potentially higher enzyme inhibitory activities (25–26% inhibition against α-amylase, 54–60% inhibition against α-glucosidase, 42–46% inhibition against dipeptidyl peptidase IV, 12–19% inhibition against acetylcholinesterase and 20–23% inhibition against butyrylcholinesterase) than those from other genera. Interestingly, lima beans with low isoflavone content (up to 2 mg/100 g bean) still possessed high inhibitory activities against lipase (12–21% inhibition) and β-secretase (50–58% inhibition), suggesting that bioactive compounds other than the isoflavones might be responsible for these activities. Isoflavone contents and enzyme inhibitory activities in Vigna beans were diverse, depending on the particular cultivars. The information gained from this study can be used for further investigation of bioactive components and in-depth health properties, as well as for future breeding of a new lineage of bean with specific health potentials.

Phenolic Profiles and Bioactivities of Ten Original Lineage Beans in Thailand

This study aimed to investigate the proximate and phytochemicals present in seeds of 24 mung bean (Vigna radiate L.) genotypes from four provinces of China for estimating their nutritional and antioxidant properties. Proximate analysis of mung bean genotypes revealed that starch, protein, fat, ash and water-soluble polysaccharide ranged from 39.54–60.66, 17.36–24.89, 4.24–12.18, 2.78–3.53 and 1.99–2.96 g/100 g respectively. The five principal fatty acids detected in mung beans were stearic acid, palmitic acid, linoleic acid, oleic acid, and linolenic acid. The contents of insoluble-bound phenolic compounds, soluble phenolic compounds, and flavonoids ranged from 0.78 to 1.5 mg GAE g− 1, 1.78 to 4.10 mg GAE g− 1, and 1.25 to 3.52 mg RE g− 1, respectively. The black seed coat mung bean genotype M13 (Suheilv 1) exhibited highest flavonoid and phenolic contents which showed strong antioxidant activity. Two flavonoids (vitexin and isovitexin) and four phenolic acids (caffeic, syringic acid, p-coumaric, and ferulic acids) were identified by HPLC. Vitexin and isovitexin were the major phenolic compounds in all mung bean genotypes. The content of soluble phenolic compounds had positive correlation with DPPH (r2 = 0.713) and ABTS (r2 = 0.665) radical scavenging activities. Principal component analysis indicated that the first two principal components could reflect most details on mung bean with a cumulative contribution rate of 66.1%. Twenty-four mung bean genotypes were classified into four groups based on their phenolic compounds contents and antioxidant activities. The present study highlights the importance of these mung bean genotypes as a source of nature antioxidant ingredient for the development of functional foods or a source of health promoting food.
