TL;DR: In this paper, the antioxidant and antimicrobial activities of mango seed kernel extract and oil were investigated, and the results indicated that combination of both mango seed kernels and oil had optimum antioxidant potency higher than each one alone.

Lactococcus species for conventional Karish cheese conservation

TL;DR: Chemical composition of tested cheese samples was similar to the conventional Karish cheese, whilst rheological and sensorial properties were enhanced which encourage recommending these strains as starter cultures conserving and enhancing this type of traditional cheese.
