Aproveitamento da água de umidificação de malte da moagem úmida como matéria prima na fabricação de cerveja

TL;DR: In this article, the authors evaluate possible gain in mashing efficiency as well as changes in beer characteristics by using distilled water and malt steep water in Pilsen beer, and conclude that the use of steep water did not change chemical and sensorial characteristics of the beer; but there was a light increase in beer colour.
