Real-time monitoring of process parameters in rice wine fermentation by a portable spectral analytical system combined with multivariate analysis
TL;DR: A portable and low-cost spectral analytical system was developed and used to monitor real-time process parameters, i.e. total sugar content, alcohol content and pH during rice wine fermentation, and the synergy interval PLS (Si-PLS) was found to be superior.
