The present invention is directed to water-in-oil and oil-in-water emulsions containing fish oil which are stabilized by enzyme systems which prevents or retards against the deleterious formation of malodorous alcohols and aldehydes thereby eliminating the undesired odor and off-flavor associated with the formation of these organic products. The enzyme system contemplated by the present invention include compositions of (a) aldehyde dehydrogenase plus alcohol dehydrogenase plus nicotinamide adenine dinucleotide (NAD); (b) aldehyde oxidase plus alcohol oxidase plus catalase; and (c) xanthine oxidase plus alcohol oxidase plus catalase.

PROBLEM TO BE SOLVED: To provide a fish oil deodorization method that can carry out the treatment in a short period of time, that is low in cost, that has a high deodorization effect and yet does not impair the active ingredients, and that prevents the deterioration in quality due to oxidation or high-temperature treatment.SOLUTION: The fish oil deodorization method includes: charging a fish oil and a powdered activated charcoal into a bread yeast-containing aqueous solution heated to a temperature at which the activity of bread yeast is retained; agitation-treating the same for one to three hours under a reduced pressure while retaining the activity of bread yeast, followed by heating within a range that does not affect the quality of useful ingredients of fish oil, to deactivate the activity of bread yeast, and agitating for one to three hours in said state; and then, heat sterilizing the same, followed by separating a fish oil.

Fish oil deodorization method

PURPOSE:To remove the fishy smell of deep-sea fish oil, in high efficiency, keeping the melting point and other physical properties unchanged, by treating the oil with yeast or yeast and an aqueous solution of saccharides. CONSTITUTION:A deep-sea fish oil is brought into contact with >=10wt%, preferably 20-50wt% baker's yeast and yeast cells such as moistened dry yeast for 3-6hr, or with >=10wt% yeast cells and 50-100wt% aqueous solution of saccharides having a concentration of 5-50wt%.

Deodorization of deep-sea fish oil

PURPOSE:To remove the characteristic fishy smell of an abyssal fish oil, with simple method, by treating the oil with soil and a nutrient medium for the proliferation of microorganisms. CONSTITUTION:Soil (ordinary soil of paddy field, plowed land, forestry, etc.) and a nutrient medium for the proliferation of microorganisms (e.g. Waksman medium, bouillon medium, etc.) are added to an abyssal fish oil (e.g. orange raffy oil containing 88% 36-42C ester and 7.6% triglyceride), and mixed by shaking or agitation. The deodorized oil is separated and recovered by centrifugal separation, filtration, etc. The effect can be further improved by inoculating soil microorganisms in the oil.
