Currently, there is growing interest in screening and quantifying antioxidants from biological samples in the quest for natural and effective antioxidants to combat free radical-related pathological complications. Antioxidants play an important role in human health and provide a defense against many diseases. Due to the valuable dietary role of these compounds, the analysis and determination of their amount in food is of particular importance. In recent years, many attempts have been made to provide simple, fast, and economical analytical approaches for the on-site detection and determination of antioxidant activity in food antioxidants. In this regard, electrochemical sensors and biosensors are considered promising tools for antioxidant research due to their high sensitivity, fast response time, and ease of miniaturization; thus, they are used in a variety of fields, including food analysis, drug screening, and toxicity research. Herein, we review the recent advances in sensors and biosensors for the detection of antioxidants, underlying principles, and emphasizing advantages, along with limitations regarding the ability to discriminate between the specific antioxidant or quantifying total antioxidant content. In this work, both direct and indirect methods for antioxidants detecting with electrochemical sensors and biosensors are analyzed in detail. This review aims to prove how electrochemical sensors and biosensors represent reliable alternatives to conventional methods for antioxidant analysis.

A Review on Electrochemical Sensors and Biosensors Used in Assessing Antioxidant Activity

The analysis of antioxidants in different foodstuffs has become an active area of research, which has led to many recently developed antioxidant assays. Many antioxidants exhibit inherent electroactivity, and, therefore, the use of electrochemical methods could be a viable approach for evaluating the overall antioxidant activity of a matrix of nutraceuticals without the need for adding reactive species. Green tea is believed to be a healthy beverage due to a number of therapeutic benefits. Catechin, one of its constituents, is an important antioxidant and possesses free radical scavenging abilities. The present paper describes the electrochemical properties of three screen-printed electrodes (SPEs), the first one based on carbon nanotubes (CNTs), the second one based on gold nanoparticles (GNPs) and the third one based on carbon nanotubes and gold nanoparticles (CNTs-GNPs). All three electrodes were modified with the laccase (Lac) enzyme, using glutaraldehyde as a cross-linking agent between the amino groups on the laccase and aldehyde groups of the reticulation agent. As this enzyme is a thermostable catalyst, the performance of the biosensors has been greatly improved. Electro-oxidative properties of catechin were investigated using cyclic voltammetry (CV) and differential pulse voltammetry (DPV), and these demonstrated that the association of CNTs with GNPs significantly improved the sensitivity and selectivity of the biosensor. The corresponding limit of detection (LOD) was estimated to be 5.6 × 10−8 M catechin at the CNT-Lac/SPE, 1.3 × 10−7 M at the GNP-Lac/SPE and 4.9 × 10−8 M at the CNT-GNP-Lac/SPE. The biosensors were subjected to nutraceutical formulations containing green tea in order to study their catechin content, using CNT-GNP-Lac/SPE, through DPV. Using a paired t-test, the catechin content estimated was in agreement with the manufacturer’s specification. In addition, the relationship between the CNT-GNP-Lac/SPE response at a specific potential and the antioxidant activity of nutraceuticals, as determined by conventional spectrophotometric methods (DPPH, galvinoxyl and ABTS), is discussed in the context of developing a fast biosensor for the relative antioxidant activity quantification.

Assessment of the Antioxidant Activity of Catechin in Nutraceuticals: Comparison between a Newly Developed Electrochemical Method and Spectrophotometric Methods

via simple hydrothermal method, CeO2 was in-situ grown onto the CNTs to form CeO2/CNTs nanocomposites were synthesized with cerium nitrate as Ce resource. The morphology and structure were characterized by transmission electron microscopy and X-ray diffraction. The characterizations reveal that CeO2 nanoparticles are uniformly dispersed onto the surface of the pre-acidified CNTs. The electrochemical property of the synthesized nanocomposite was investigated in 0.1 M KCl electrolyte containing 2 mM [Fe(CN)6]3-/4-. The nanocomposites were employed to fabricate electrochemical sensor for phenol detection. The linear range for phenol detection measured by the differential pulse voltammetry method is 1–500 μM. The sensor also exhibits good selectivity, reproducibility and stability. When applied for the river and tap water analysis, it shows good recovery rate.

Simple Synthesis of CeO2 Nanoparticle Composites In Situ Grown on Carbon Nanotubes for Phenol Detection

Thermodynamic behavior of polymer chains out of equilibrium is a fundamental problem in both polymer physics and biological physics. By using molecular dynamics simulation, we discover a general non-equilibrium mechanism that controls the conformation and dynamics of polar active polymer, i.e., head activity commands the overall chain activity, resulting in re-entrant swelling of active chains and non-monotonic variation of Flory exponent $\nu$. These intriguing phenomena lie in the head-controlled railway motion of polar active polymer, from which two oppose non-equilibrium effects emerge, i.e., dynamic chain rigidity and the involution of chain conformation characterized by the negative bond vector correlation. The competition between these two effects determines the polymer configuration. Moreover, we identify several generic dynamic features of polar active polymers, i.e., linear decay of the end-to-end vector correlation function, polymer-size dependent crossover from ballistic to diffusive dynamics, and a polymer-length independent diffusion coefficient that is sensitive to head activity. A simple dynamic theory is proposed to faithfully explain these interesting dynamic phenomena. This sensitive structural and dynamical response of active polymer to its head activity provides us a practical way to control active-agents with applications in biomedical engineering.

Non-Equilibrium Structural and Dynamic Behaviors of Polar Active Polymer Controlled by Head Activity

Tea is a popular beverage all around the world. Tea composition, quality monitoring, and tea identification have all been the subject of extensive research due to concerns about the nutritional value and safety of tea intake. In the last 2 decades, research into tea employing electrochemical biosensing technologies has received a lot of interest. Despite the fact that electrochemical biosensing is not yet the most widely utilized approach for tea analysis, it has emerged as a promising technology due to its high sensitivity, speed, and low cost. Through bibliometric analysis, we give a systematic survey of the literature on electrochemical analysis of tea from 1994 to 2021 in this study. Electrochemical analysis in the study of tea can be split into three distinct stages, according to the bibliometric analysis. After chromatographic separation of materials, electrochemical techniques were initially used only as a detection tool. Many key components of tea, including as tea polyphenols, gallic acid, caffeic acid, and others, have electrochemical activity, and their electrochemical behavior is being investigated. High-performance electrochemical sensors have steadily become a hot research issue as materials science, particularly nanomaterials, and has progressed. This review not only highlights these processes, but also analyzes and contrasts the relevant literature. This evaluation also provides future views in this area based on the bibliometric findings.

Electrochemical Sensors and Biosensors for the Analysis of Tea Components: A Bibliometric Review

The dynamics of a two-dimensional active polymer composed of an active Brownian particle (ABP) at the head and a passive polymer chain is investigated using Langevin dynamics simulation. The ABP experiences a self-propulsion force fs and a resistance torque M as the passive polymer chain is bonded to the edge of the ABP. M restricts the rotation of the ABP, and thus the dynamics of the ABP and that of the whole active polymer are influenced significantly. Due to this restriction, the persistence time τr, which characterizes the random rotation of the ABP, is increased significantly and changes non-monotonically with the rotational friction coefficient ηr. Our simulation results show that the effect of M on the dynamics of the active polymer can be characterized mainly by the change of τr. Moreover, the propulsive diffusion coefficient DP of the whole polymer chain originated from the self-propulsion force can be described by a scaling relation DP ∝ fs2τr/N2ηt2 with ηt the translational friction coefficient and N the polymer length. Our results show that the diffusion is promoted by the resistance torque M and τr is a key factor for the diffusion of active polymers.
