Rheology of concentrated xanthan gum solutions: Steady shear flow behavior

TL;DR: In this article, the steady shear flow properties of aqueous xanthan gum solutions of different concentrations were measured over a wide range of shear rates using a strain-controlled rheometer, and the viscous behavior was quantitatively discussed using a well-known power law type flow equation with a special emphasis on its importance in industrial processing.

Transient rheological behavior of natural polysaccharide xanthan gum solutions in start-up shear flow fields: An experimental study using a strain-controlled rheometer

TL;DR: In this article, the authors investigate the transient rheological behavior of concentrated xanthan gum solutions in start-up shear flow fields and find that the maximum shear stress is linearly increased with shear rate in a double logarithmic scale and becomes larger with increasing concentration.
