Abstract: This paper attempts to demonstrate the need for both continuous and increasing alertness with respect to food hygiene. The airlines already perform a considerable amount of preventive hygienic work. Nevertheless, a few months ago a serious outbreak of acute gastroenteritis occurred during a tour in the Orient. Twenty-three of a tour group of 42 passengers developed diarrhea, abdominal cramps and vomiting. One person died and 2 others had to be hospitalized. Epidemiological investigation incriminated part of a dinner (shrimp/crab salad) which was served during the flight between Bangkok and Hongkong on May 3, 1969. The mean incubation time for this food poisoning outbreak was 15 hr. The first symptoms were observed 5 hr after consumption of the suspected dish. No information could be obtained on the other passengers on the same flight who did not belong to the tour group, due to lack of information on where to contact them in Hongkong.

It affects us in two ways: We are affected by the external environment—the land, water, air, noise, and light in which we arc immersed. That's why we worry about pollution. We are also dependent upon an internal environment created by our heredity, energized by the sun, and fueled by the food we eat This is why we worry about pesticides and food additives.
