Abstract
In the prodn. of flat cakes from wheat dough, esp. for Persian bread, the dough is made up into a continuous band. This is rolled out in a series of stages to the required thickness and flat cakes of the required shape and size are then stamped out and passed through continuous rising and baking operations. Before the cakes are cut out, the band of dough is punctured vertically to its surface and after the stamping out, the cakes are stretched to open out the punctures. The process replaces the slow and unhygienic manual prodn. of round and rectangular flat cakes, punctured all over their surfaces, by uncomplicated mechanical means.
