Abstract: The present invention relates to a production technology for making thick wine by using black polished glutinous rice as the main raw material. Its production technological process is that the black glutinous rice is shelled twice to obtain refined rice, and the refined rice passes through the procedures of soaking, boiling, cooling, yeast-mixing, spraying immersion, mesothermal semi-solid fermentation, stirred with water, low-temp, liquid fermentation in tank, breaking filter and milling to obtain a milky wine liquor A; the obtained rice shell passes through the procedures of pulverization, immersion, filtration, and passing through a colloid mill in the case of addition of auxiliary material to obtain its immersed liquor B; and the said A and B liquors are mixed milled, bottled and sterilized to obtain the said thick wine.
