Journal ArticleDOI
Metabolomics reveals impact of seven functional foods on metabolic pathways in a gut microbiota model.
Mohamed A. Farag,Mohamed A. Farag,Amr Abdelwareth,Ibrahim E. Sallam,Mohamed el Shorbagi,Nico Jehmlich,Katarina Fritz-Wallace,Stephanie Serena Schäpe,Ulrike Rolle-Kampczyk,Anja Ehrlich,Ludger A. Wessjohann,Martin von Bergen,Martin von Bergen +12 more
TL;DR: In this article, the impact of functional foods on the Gut Microbiota has been analyzed using untargeted metabolomics, which can be assessed in a whole by untargeting metabolomics.
Journal ArticleDOI
Chemometrics-based aroma profiling for revealing origin, roasting indices, and brewing method in coffee seeds and its commercial blends in the Middle East.
TL;DR: In this paper, the authors report on the chemical sensory attributes of Middle Eastern coffee blends and further reveal for the impact of brewing, roasting on its aroma composition, including the potential roasting index in instant coffee and roasted C. robusta brews.
Journal ArticleDOI
Effect of Gut Microbiota Biotransformation on Dietary Tannins and Human Health Implications.
Ibrahim E. Sallam,Amr Abdelwareth,Heba Attia,Ramy K. Aziz,Masun Nabhan Homsi,Martin von Bergen,Martin von Bergen,Mohamed A. Farag +7 more
TL;DR: In this article, the effect of the human microbiota on the metabolism of different tannin groups and the expected health benefits that may be induced by such mutual interactions was summarized. And explainable artificial intelligence was used to define the molecular signatures of gut-biotransformed tANNin metabolites that are correlated with chemical and biological activity.
Journal ArticleDOI
Dissecting coffee seeds metabolome in context of genotype, roasting degree, and blending in the Middle East using NMR and GC/MS techniques
Ahmed Zayed,Ahmed Zayed,Clayton C. Petro,Amr Abdelwareth,Tarik A. Mohamed,Heba Fahmy,Andrea Porzel,Ludger A. Wessjohann,Mohamed A. Farag +8 more
TL;DR: In this article, the authors presented a multi-faceted comparative metabolomics approach dissecting commercially available coffee products in the Middle East region for quality assessment and functional food purposes using NMR and GC/MS platforms.
Journal ArticleDOI
Metabolomics-Based Approach for Coffee Beverage Improvement in the Context of Processing, Brewing Methods, and Quality Attributes
TL;DR: In this paper , a review summarizes the applications of various mass spectrometry and nuclear magnetic resonance (NMR)-based metabolomics technologies in determining the impact of coffee breeding, origin, roasting, and brewing on coffee chemical composition, and considers this in relation to quality control (QC) determination, for example, by classifying defected and non-defected seeds or detecting the adulteration of raw materials.
