This study compared the meat quality of Sicilian and Landrace pigs breeds and supported these results with biochemical and histological measurements on the samples collected from the m. Longissimus Dorsi, at the level of the 8th thoracic vertebra,  before electrical stimulation. Twenty clinically healthy swine, 10 male (5 for each pig breed) and 10 female (5 for each pig breed), were slaughtered at 1 year of age at a body mass of 135±10 kg and 150±10 respectively for Sicilian and Landrace pigs.  Particularly on the muscle considered the morphometric characteristics of FG (fast glycolytic), FOG (fast oxidative glycolytic)  and SO (slow oxidative)  fibre types and their percentage were determined. Measurements related to myofibrillar fragmentation, sarcomere length and connective tissue properties gave convincing support. Sicilian pig produced more tender meat than Landrace, mainly due to favourable calpain-to-calpastatin ratios.

Sheep and goat genetic resources in Central Serbia

The paper presents results of investigating possibilities for organizing and developing organic production in sheep farming, in the territory of the Sjenica-Pester plateau. The results of investigations on yield, floristic and chemical composition, as well as harmful matter, demonstrate that conditions exist for the development of organic production, in particular of organic lamb meet. On the grounds of its known characteristics, the Sjenica- Pester Pramenka breed presents the most suitable breed for organizing organic sheep production. Organic sheep production can largely contribute to rural development and the advancement of this region.

Contribution to reviewing potentials of natural resources of the Sjenica-Pešter plateau for organizing organic sheep production

Basic principles that inform organic livestock production are reviewed in this paper, with special emphasis on milk and meat production in cattle and sheep. Research findings to date are presented on the impact of various management practices, both organic and conventional, as they effect product yield and quality. The importance of incorporating autochnochous breeds into organic milk and meat production systems is particularly emphasized. Additionally, a global overview of organic milk and meat production is given, along with an assessment of opportunites for implementing organic production systems in Serbia.
