Rennet-coagulated cheeses are ripened for periods ranging from about two weeks to two or more years depending on variety. During ripening, microbiological and biochemical changes occur that result in the development of the flavour and texture characteristic of the variety. Biochemical changes in cheese during ripening may be grouped into primary (lipolysis, proteolysis and metabolism of residual lactose and of lactate and citrate) or secondary (metabolism of fatty acids and of amino acids) events. Residual lactose is metabolized rapidly to lactate during the early stages of ripening. Lactate is an important precursor for a series of reactions including racemization, oxidation or microbial metabolism. Citrate metabolism is of great importance in certain varieties. Lipolysis in cheese is catalysed by lipases from various source, particularly the milk and cheese microflora, and, in varieties where this coagulant is used, by enzymes from rennet paste. Proteolysis is the most complex biochemical event that occurs during ripening and is catalysed by enzymes from residual coagulant, the milk (particularly plasmin) and proteinases and peptidases from lactic acid bacteria and, in certain varieties, other microorganisms that are encouraged to grow in or on the cheese. Secondary reactions lead to the production of volatile flavour compounds and pathways for the production of flavour compounds from fatty acids and amino acids are also reviewed.

to yogurt manufacture. The taxonomy of these bacteria is presented. Different proposed pathways for carbohydrate metabolism are then discussed, as weil as recent molecular and genetic studies of the enzymes involved. Acetaldehyde is the major aromatic compound in yogurt, and so the different pathways of its formation are briefly described. Recent studies have concerned threonine aldolase which catalyzes acetaldehyde synthesis by yogurt bacteria. Exocellular polysaccharides produced by lactic acid bacteria improve the texture of stirred and liquid yogurts. Some of the polysaccharides of yogurt bacteria are currently known and particular aspects of their production are discussed. Some other properties, le proteolysis, Iipolysis, urease, oxygen metabolism, are also briefly presented. Interactions between streptococci and lactobacilli are weil established, but more data are required for the complete characterization and control of mixed populations. In particular, Iittle is known about antimicrobial compounds produced by these microorganisms. Bacteriophages of yogurt bacteria are now weIl characterized, but liltle is known about Iysogeny in thermophilic streptococci. Finally, progress in genetics (on both plasmid and chromosomal DNA) is briefly discussed.

The proteolytic systems of lactic acid bacteria are important as a means of making protein and peptide N available for growth and as part of the curing or maturation processes which give foods their characteristic rheological and organoleptic properties. The proteolytic systems of lactic acid bacteria are described in relation to their growth and their functions in protein-rich foods. Their role in the manufacture of milk products is discussed.
