The importance of the diet in relation to human health has increased the interest of consumers on nutraceuticals rich foods, and especially on fruits and vegetables. Berries are rich sources of a wide variety of antioxidant phenolics; these phytochemicals include flavonoids, stilbenes, tannins, and phenolic acids. Reactive oxidant species and free radicals are produced in an extensive range of physiological processes. In addition to the antioxidant defenses produced in the body, there are exogenous sources supplied by the diet; this is the case of berry fruits, among others. The insufficiency of antioxidant defense mechanisms is associated to the pathology of chronic disorders such as cardiovascular diseases, inflammation, and diabetes. Therefore, the enforcement of the latter mechanisms is of the utmost importance. The isolation and characterization of compounds that may delay the onset of aging is receiving intense research attention; some berry phenolics are being associated with this functional performance. Berry phenolics may also act as antimicrobials which may be of help in the control of the wild spectra of pathogens, in view of recent problems associated with antibiotic resistance. Most of the research works on the antioxidant activity of bioactive constituents of berries has been carried out using in vitro assays. In view of this, the human studies investigating the bioavailability and potential toxicity of phenolics are receiving more attention. Finally, we would like to emphasize the necessity of associating new plant breeding and genetic studies of berries with the expression and overexpression of compounds for human health and healthy aging.

Comparative antioxidant capacities of phenolic compounds measured by various tests

Phenolic compounds are secondary metabolites widely found in fruits, mostly represented by flavonoids and phenolic acids. The growing interest in these substances is mainly because of their antioxidant potential and the association between their consumption and the prevention of some diseases. The health benefits of these phytochemicals are directly linked to a regular intake and their bioavailability. Studies have shown the importance of the regular consumption of fruits, especially for preventing diseases associated with oxidative stress. In the present review, the most recent articles dealing with polyphenols in fruits are reviewed, focusing on their occurrence, main methods of extraction, quantification and antioxidant assays. In addition, the health benefits and bioaccessibility/bioavailability of phenolic compounds in fruits are addressed.

Phenolic compounds in fruits – an overview

Interest in the consumption of fresh fruits and vegetables is, to a large extent, due to its content of bioactive nutrients and their importance as dietary antioxidants. Among all of the selected fruits and vegetables, strawberries and black grapes have relatively high antioxidant capacities associated with high contents of total phenolic compounds, ascorbic acid, and flavonols. More interesting, the results of this study indicated that in most fruits and vegetables storage did not affect negatively the antioxidant capacity. Better, in some cases, an increase of the antioxidant capacity was observed in the days following their purchase, accompanied by an increase in phenolic compounds. In general, fruits and vegetables visually spoil before any significant antioxidant capacity loss occurs except in banana and broccoli. When ascorbic acid or flavonoids (aglycons of flavonols and anthocyanins) were concerned, the conclusions were similar. Their content was generally stable during storage.
