Morbidity and mortality from bovine respiratory disease (BRD) and associated losses in performance and carcass merit continue to plague the beef cattle industry. Several viral/bacterial agents are responsible for BRD, and interactions occur among the agents. Viral agents often predispose animals to bacterial infections, and Mannheimia haemolytica is the most frequently isolated organism in cattle with BRD. Laboratory tests are available to characterize organisms causing BRD using easily obtained nasal swab samples. Testing for persistent infection with bovine viral diarrhea virus can be done by a 2-stage technique using PCR and immunohistochemistry. Preconditioning programs that include preweaning viral vaccination programs along with castration could have a significant influence on decreasing BRD in the cattle feeding industry. Metaphylactic antibiotic programs continue to be effective; however, antibiotic resistance is a public concern, and additional management options (e.g., direct-fed microbials or other compounds with antimicrobial properties) deserve attention. Diets with an increased energy concentration achieved by decreasing the dietary roughage concentration may slightly increase the rate of BRD morbidity; however, these diets also increase ADG, DMI, and G:F compared with lower-energy, greater-roughage diets. The extent to which performance and BRD morbidity are affected by dietary protein concentration needs further study, but low and high protein concentrations should probably be avoided. Several trace minerals (e.g., Cu, Se, and Zn) affect immune function, but the effects of supplementation on performance and immune function in model challenge systems and in field studies are equivocal. Adding vitamin E to receiving diets at pharmacological levels (e.g., >1,000 IU x animal(-1) x day(-1)) seems beneficial for decreasing BRD morbidity, but it has little effect on performance. Given the limited ability to consistently modify immune function and BRD morbidity through dietary manipulations, we recommend that the diets for newly received cattle be formulated to adjust nutrient concentrations for low feed intake and to provide optimal performance during the receiving period.

Board-invited review: recent advances in management of highly stressed, newly received feedlot cattle.

This study utilized maternal undernutrition from early to midgestation in the ewe to determine the impact(s) of intrauterine growth restriction on postpartum growth of male offspring and the potential mechanisms involved. Multiparous ewes were fed 50% (nutrient-restricted) or 100% (control-fed) of their nutrient requirements (NRC, 1985) between d 28 and 78 of gestation, and then all ewes were fed 100% of the NRC requirements from d 79 through lambing. Male lambs born to nutrient-restricted (n = 9) and control-fed (n = 9) ewes exhibited similar BW (5.8 vs. 6.0 +/- 0.3 kg) and crown-rump lengths (53.8 vs. 55.4 +/- 1.0 cm) at birth. At 63 and 250 d of postnatal age, wether lambs were subjected to a glucose tolerance test, in which a bolus of glucose was administered i.v. to evaluate changes in glucose and insulin concentrations. After i.v. glucose administration at 63 d of age, lambs from nutrient-restricted ewes exhibited a greater area under the curve for glucose (AUCg; 6,281 vs. 5,242 +/- 429; P < 0.05) and insulin (AUCi; 21.0 vs. 8.6 +/- 1.9; P < 0.001) than lambs from control-fed ewes. After glucose administration at 250 d of age, lambs from nutrient-restricted ewes had greater AUCg (7,147 vs. 5,823 +/- 361; P < 0.01) but a lower AUCi (6.4 vs. 10.2 +/- 1.9; P = 0.05) than lambs from control-fed ewes. Lambs from nutrient-restricted ewes were heavier (26.6 vs. 21.8 +/- 2.3 kg; P < 0.05) and had more backfat (0.30 vs. 0.21 +/- 0.03 cm, P < 0.05) by 4 mo of age than the lambs from control-fed ewes. At slaughter at 280 d of age, lambs from nutrient-restricted ewes remained heavier than lambs from control-fed ewes, had greater (P < 0.05) amounts of kidney and pelvic-area adipose tissue, and tended (P < 0.10) to have reduced LM and semitendinosus muscle weights as a percentage of HCW. These data demonstrate that a bout of maternal undernutrition during early to midgestation in sheep increased BW and fat deposition during adolescence and dysregulated glucose uptake in the absence of any change in birth weight.

The quality and value of the carcass in domestic meat animals are reflected in its protein and fat content. Preadipocytes and adipocytes are im- portant in establishing the overall fatness of a carcass, as well as being the main contributors to the marbling component needed for consumer preference of meat products. Although some fat accumulation is essential, any excess fat that is deposited into adipose depots other than the marbling fraction is energetically un- favorable and reduces efficiency of production. Hence, this review is focused on current knowledge about the biology and regulation of the important cells of adipose tissue: preadipocytes and adipocytes.

Board-invited review: the biology and regulation of preadipocytes and adipocytes in meat animals.

The usual means of assessing the health of newly received beef cattle susceptible to bovine respiratory disease (BRD) are subjective, typically involving visual evaluation aided by minimal clinical measurements. Recent evidence based on the occurrence of pneumonic lung lesions at slaughter indicates a need for more accurate methods of diagnosing BRD. Inadequate passive immune transfer at birth may be an important risk factor in susceptibility to BRD, suggesting the need for management to improve passive transfer success rates. Preweaning management and vaccination practices offer opportunities for beef cattle producers to improve the immune status of newly weaned calves and decrease postweaning BRD. Feeding diets with higher levels of concentrate typically improves performance by newly weaned or received cattle, as does feeding diets supplemented with protein; however, limited data suggest that increasing concentrate and protein in receiving diets increases the rate and severity of subjectively determined BRD morbidity. Research with receiving diet concentrate/protein level relative to humoral and cell-mediated immune function coupled with indicators of health and performance is needed. Supplemental B vitamins are sometimes useful in receiving diets, but the effects have been variable, presumably reflecting differences in stress and associated feed intake responses. Vitamin E added to receiving diets to supply > or = 400 IU/animal daily seems beneficial for increasing gain and decreasing BRD morbidity; however, further dose titration experiments are needed. Supplemental Zn, Cu, Se, and Cr can alter immune function of newly received calves, and some field trials have shown decreases in BRD morbidity rate with supplementation; however, several experiments have shown no performance or health/immune benefits from supplementation of these trace minerals. Formulation of receiving diets should take into account decreased feed intake by highly stressed, newly received beef cattle and known nutrient deficiencies, but fortification of such diets with trace minerals beyond the levels needed to compensate for these effects is difficult to justify from present data.

Interaction of cattle health/immunity and nutrition.

Early gestation is critical for placentomal growth, differentiation, and vascularization, as well as fetal organogenesis. The fetal origins of adult disease hypothesis proposes that alterations in fetal nutrition and endocrine status result in developmental adaptations that permanently change structure, physiology, and metabolism, thereby predisposing individuals to cardiovascular, metabolic, and endocrine disease in adult life. Multiparous ewes were fed to 50% (nutrient restricted) or 100% (control fed) of total digestible nutrients from Days 28 to 78 of gestation. All ewes were weighed weekly and diets adjusted for individual weight loss or gain. Ewes were killed on Day 78 of gestation and gravid uteri recovered. Fetal body and organ weights were determined, and numbers, morphologies, diameters, and weights of all placentomes were obtained. From Day 28 to Day 78, restricted ewes lost 7.4% of body weight, while control ewes gained 7.5%. Maternal and fetal blood glucose concentrations were reduced in restricted versus control pregnancies. Fetuses were markedly smaller in the restricted group than in the control group. Further, restricted fetuses exhibited greater right- and left-ventricular and liver weights per unit fetal weight than control fetuses. No treatment differences were observed in any gross placentomal measurement. However, caruncular vascularity was enhanced in conceptuses from nutrient-restricted ewes but only in twin pregnancies. While these alterations in fetal/placental development may be beneficial to early fetal survival in the face of a nutrient restriction, their effects later in gestation as well as in postnatal life need further investigation.

Maternal Undernutrition from Early- to Mid-Gestation Leads to Growth Retardation, Cardiac Ventricular Hypertrophy, and Increased Liver Weight in the Fetal Sheep

Growth is defined as an increase in tissue mass. Mass increases by hyperplasia early in life and hypertrophy later in life, although hyperplasia of adipose tissue continues throughout life. The growth curve, being mass or cumulative weight plotted against age, is sigmoid, consisting of a prepubertal accelerating phase plus a postpubertal decelerating phase. Mathematically, this curve can be described as a function of mature mass, fractional growth rate, and age. At a specific fraction of mature mass, body composition seems to be constant, but the degree to which nutrition can alter mature mass is not certain. If mature mass is altered, body composition at any given mass will be altered. Mature mass can be decreased by starvation or protein deficiency early in life. Alternatively, retarding the deposition of fat or the administration of estrogenic compounds may increase mature protein mass. Many of the advances in rate and efficiency of growth and in reduced fat of meat cuts can be explained by increased mature protein mass of ruminants. Animals with higher mature weight require more energy for maintenance and reach puberty later in life, so a larger mature mass is not desirable for the breeding herd. Indeed, smaller replacement heifers would prove economical if reproduction were not decreased. A period of restricted growth and fat deposition (as on pasture) can increase the slaughter weight of small cattle into a more desirable range, presumably through increasing mature protein mass. However, calves with retarded growth often make less efficient feedlot gains than do calves finished immediately after being weaned. For growing large-framed heifers, pasture alone often provides an inadequate energy supply for early puberty, but excessive amounts of supplemental feed can enhance fat deposition in the udder, which subsequently decreases milk production. By manipulating the supply of specific nutrients and hormones, it may prove feasible in the future to reduce fat deposition in specific tissues and to alter mature body protein mass.

Factors that alter the growth and development of ruminants.

For nonruminants, stress and disease greatly increase requirements for vitamin B 6 , folic acid, pantothenic acid, and ascorbate. The effects of feed restriction, virus infection, and vitamin injections on plasma concentrations of B vitamins critical to the immune response were evaluated. Twelve beef steer calves, 6 to 8 mo of age, were fed below maintenance for 17 d and deprived of food for 3 d during a 20-d period after weaning. They then were inoculated intranasally with live attenuated bovine herpesvirus-1 (BHV-1). Six calves received saline injections and six received injections of a B vitamin mixture and ascorbate every 48 h for 14 d before and 14 d after inoculation. A mild respiratory infection developed in all calves 4 to 5 d after inoculation. In control calves, restricted intake and food deprivation decreased plasma vitamin B 6 and pantothenate and increased vitamin B 12 but did not affect folic acid and ascorbate concentrations. Vitamin injections increased plasma concentrations of vitamin B 6 , folic acid, vitamin B 12 , pantothenic acid, and ascorbate (P <.002). Plasma concentrations of vitamin B 6 , vitamin B 12 , pantothenic acid, and ascorbate, but not folic acid, were markedly reduced in all calves during the BHV-1 infection (P = .001). The vitamin B 6 , pantothenic acid, vitamin B 12 , and ascorbate status of stressed calves may affect their immune response to vaccination or infection.

Effects of B vitamin injections on plasma B vitamin concentrations of feed-restricted beef calves infected with bovine herpesvirus-1

Because feed and water deprivation during marketing and transport of feedlot calves may reduce ruminal B vitamin synthesis at a time when calves are most susceptible to infectious agents, we studied the effect of B vitamin injections on infection and immunity in 12 6-mo-old beef steer calves (153 +/- 8 kg) that were weaned, limit-fed, and deprived of feed. Six calves were injected with B vitamins and ascorbic acid every 48 h for 28 d starting 2 wk before virus inoculation. All calves were infected with an attenuated strain of bovine herpesvirus type 1 (BHV-1) on d 0. From time of arrival (d -20) until the end of a 3-d period without food (d -6), calves lost 13.1% of their initial weight. However, they regained weight after re-feeding so that net weight loss was 7.7% for the 20-d period prior to infection. The stress/BHV-1 model resulted in a mild respiratory infection in all calves with no difference observed between treatment groups. Vitamin injections did not significantly affect virus and interferon titers in nasal secretions, or lymphocyte blastogenesis. However, the B vitamin treatment tended to increase serum IgG titers to BHV-1 on both d 14 (1,120 vs 550, P = .115) and d 28 (2,400 vs 1,830, P = .37) after infection. Averaged across d 14 and d 28, IgG titers tended to be higher (P < .09) for the calves receiving B vitamin injections, indicating that the humoral immune response was enhanced by B vitamin treatment. B vitamin status in stressed calves at the time of vaccination or disease challenge may affect the success of the immune response.
