An account is given of the development of the idea of a yield stress for solids, soft solids and structured liquids from the beginning of this century to the present time. Originally, it was accepted that the yield stress of a solid was essentially the point at which, when the applied stress was increased, the deforming solid first began to show liquid-like behaviour, i.e. continual deformation. In the same way, the yield stress of a structured liquid was originally seen as the point at which, when decreasing the applied stress, solid-like behaviour was first noticed, i.e. no continual deformation. However as time went on, and experimental capabilities increased, it became clear, first for solids and lately for soft solids and structured liquids, that although there is usually a small range of stress over which the mechanical properties change dramatically (an apparent yield stress), these materials nevertheless show slow but continual steady deformation when stressed for a long time below this level, having shown an initial linear elastic response to the applied stress. At the lowest stresses, this creep behaviour for solids, soft solids and structured liquids can be described by a Newtonian-plateau viscosity. As the stress is increased the flow behaviour usually changes into a power-law dependence of steady-state shear rate on shear stress. Measuring the Flow Properties of Yield Stress Fluids

The yield stress of many yield stress fluids has turned out to be difficult to determine experimentally. This has led to various discussions in the literature about those experimental difficulties, and the usefulness and pertinence of the concept of yield stress fluids. We argue here that most of the difficulties disappear when taking the thixotropy of yield stress fluids into account, and will demonstrate an experimental protocol that allows reproducible data to be obtained for the critical stress necessary for flow of these fluids. As a bonus, we will show that the interplay of yield stress and thixotropy allows one to account for the ubiquitous shear localization observed in these materials. However, due to the thixotropy the yield stress is no longer a material property, since it depends on the (shear) history of the sample.

Yield stress and thixotropy: on the difficulty of measuring yield stresses in practice

The use of rotating vane geometries for the measurement of the flow properties of very non-Newtonian liquids has become increasingly popular over the last 20 years. Originally, these geometries were used to measure the apparent yield stresses of inorganic dispersions, but have more recently been used to measure other rheological parameters also. These include the low-strain modulus and the steady-state flow-curves of structured liquids. The particular advantages of the vane geometry are its simplicity of fabrication, ease of cleaning and more than anything else, its elimination of serious wall-slip effects. The development of the vane technique and the theory to go with it, together with its use in various areas are described, where these areas include inorganic colloidal dispersions, foods, bioengineering fermentation broths, etc.

Rotating vane rheometry — a review

Most concentrated colloidal suspensions such as cement, drilling fluids, paints, muds, etc., have been considered until now thixotropic fluids with a flow curve of an ideal yield stress fluid. We start by showing from inclined plane tests, intended to determine the yield stress, that these systems in fact exhibit peculiar properties. Unlike ideal yield stress fluids, they stop flowing abruptly below a critical stress, and start flowing at a high velocity beyond a critical stress, which in addition increases with the time of preliminary rest. In order to clarify these features we carried out a complete set of rheometrical tests with a model fluid, a bentonite suspension. Our results show that under controlled stress, in some cases after significant flow, there is bifurcation of the behavior towards either stoppage or rapid shear, depending on the relative values of the imposed and critical stresses. As an immediate consequence, we find that no (homogeneous) steady state flows at a shear rate below a critical value can be obtained. These results can be qualitatively predicted by a simple theoretical model that assumes that the viscosity of the material results from the competition between aging and shear rejuvenation, associated to, respectively, the organization or disorganization of the network of particle interactions. This shows that the flow curve in the steady state of concentrated colloidal suspensions and, more generally, of structured fluids, is strongly affected by their thixotropy.

Viscosity bifurcation in thixotropic, yielding fluids

A technique of yield stress investigation based upon the combined use of two devices (an applied stress rheometer and an instrument for measuring the propagation velocity of small amplitude, torsional shear waves) is described. Investigations into the low shear rate rheological properties of illitic suspensions are reported for shear rates, typically, in the range 10−4— 10−1 s−1 under applied stresses in the range 0.01 — 10 Nm−2 and involving shear strains between 10−1 and 10−4. Results are presented which demonstrate that the technique does not invoke the excessive structural disruption of material associated with applied shear rate based methods (direct and otherwise) and the widely encountered problem of wall slip at the surface of rotational measuring devices is avoided using miniature vane geometries. Results are compared with those obtained using smooth-walled cyclindrical measuring devices in both applied stress and applied shear rate instruments. Yield measurements are considered in relation to the structural properties of the undisturbed material state and shear moduli obtained by studying the propagation of small amplitude (10−5 rad), high frequency (~ 300 Hz) torsional shear waves through the test materials are reported. Experimental techniques and instrument modifications to permit these measurements are described.

Direct measurement of static yield properties of cohesive suspensions

Elastic and yield phenomena of cohesive sediments are usefully studied with pulse shearometry and an applied stress rheometer combined with vane geometry. These sediments are elastico-viscous materials at volumetric concentrations ϕ equal to or greater than the critical concentrations ϕ SF at which a space-filling network exists in the sediment. Vane geometry provides reliable estimates of yield stress (Γ y ) in fresh, undisturbed sediment. Γ y and shear rigidity modulus G are strongly dependent on ϕ.
