Brazil is the world largest meat exporter and one of the most recent demands of the import market is directed towards animal welfare. Codes, norms and legislations used in Brazil are out of date, and in most cases those adopted for both poultry and swine production are based on international standards to meet trade requirements. This research aimed to study and describe an overall scenario of the standards, norms and legislations for animal welfare items applied to broiler and swine production: rearing, handling and transportation. The critical points of these items were identified in accordance to standards and current literature on animal welfare issues, effective on January 2008. The comparison was based on given scores varying from 1-5 (very bad to very good) as function of the existence of standard norms and legislations for each country and/or economic block, and for each type of demand, as well as the level of adoption by producers. When compared to counterparts Brazil detained the lowest score for all types of demands, and its mean score of norms is lower (p < 0.05). For both poultry and swine production the European Union provides detailed information to producers, followed by Australia and United States. Exception is made to standards in moving or transporting swine within the farm. Brazilian legislation for poultry production presents a general insufficiency of 58%, while in swine production the highest deficit is in transportation. There is a need to invest in updating animal welfare standards, norms and legislation in the country for maintaining its international competitiveness.

Broiler And Swine Production: Animal Welfare Legislation Scenario [produção De Frangos De Corte E Suínos: Cenário Da Legislação Sobre Bem-estar Animal]

We aimed to study the potential use of carcass condemnation data of broiler chicken slaughterhouses in Brazil as indicators in an animal welfare monitoring program, and to identify points to be addressed to increase data reliability. Data from 2010 to 2015 in the states of Parana (PR), Santa Catarina (SC) and Rio Grande do Sul (RS) were used. Fractures and bruising were recorded together, representing the most prevalent welfare problem, followed by skin lesion or inflammation. In PR, progressive increases on injury, arthritis, ineffective bleeding, and air sacculitis condemnation may reveal important welfare aspects. High correlation between AWI within PR was more commonly observed than in RS and SC, perhaps as a result of earlier implementation of local meat inspection standardization. Principal component analysis showed changes on condemnation data pattern in PR after standardization, pointing injury and Escherichia coli problems as the main causes for condemnation related to animal welfare. There is considerable potential to improve animal health and welfare surveillance using meat inspection structure that is already in place for food safety purposes, provided that the competent authority harmonizes the procedure of meat inspection among the States, sets specific animal welfare outcomes to be monitored, and integrates condemnation, transport and flock data. It seems crucial to update data collection to establish a routine that allows risk analysis regarding both food safety and animal welfare. In this regard, cooperative work between Federal Inspection and companies seems an interesting approach to promote transparency of the production processes, which would benefit society and animals.

Broiler Chicken Meat Inspection Data in Brazil: A First Glimpse into an Animal Welfare Approach

ABSTRAT Arthritis implies inflammation of the intra-articular structures and is one of the causes of condemnation in broilers. The disease is associated with infectious agents such as Staphylococcus aureus, which may pose a potential public health risk. This work was conducted with the objective to determine the occurrence of arthritis in broiler chickens, predominantly of bacterial staphylococcal origin and if there is a difference between the degrees of injury regarding the presence of the bacterium and the histological lesion. Sixty samples of chickens diagnosed with arthritis by Federal Inspection Service from commercial slaughterhouse were collected according to their severity (of mild and severe degree) and submitted to bacteriological and histopathological analysis. There was bacterial growth of Staphylococcus aureus in 3.3% of the samples classified as mild degree in 10% of the samples classified as severe grade of lesion (p=0,29). For histopathological evaluation, 16.67% and 70% of the samples presented inflammatory infiltrate in mild and severe degrees, respectively (p=0,0001). Mild degree arthritis is related to non-infectious lesions in their higher prevalence while severe-grade arthritis has infectious causes. The condemnation criteria were efficient since S. aureus could be present regardless of the degree of the lesion diagnosed in arthritis.

Bacteriological and Histopathological Evaluation of Articulations of Chickens Diagnosed with Arthritis

Campylobacter jejuni is one of the most common causes of foodborne human gastroenteritis in the developed world. This bacterium colonizes in the ceca of chickens, spreads throughout the poultry production chain, and contaminates poultry products. Despite numerous on farm intervention strategies and developments in post-harvest antimicrobial treatments, C. jejuni is frequently detected on broiler meat products. This indicates that C. jejuni is evolving over time to overcome the stresses/interventions that are present throughout poultry production and processing. The development of aerotolerance has been reported to be a major survival strategy used by C. jejuni in high oxygen environments. Recent studies have indicated that C. jejuni can enter a viable but non-culturable (VBNC) state or develop biofilm in response to environmental stressors such as refrigeration and freezing stress and aerobic stress. This review provides an overview of different stressors that C. jejuni are exposed to throughout the poultry production chain and the genotypic and phenotypic survival mechanisms, with special attention to aerotolerance, biofilm formation, and development of the VBNC state.

The Federal Inspection Service is responsible for the sanitary inspection of poultry slaughter, and it routinely records injuries or illnesses that have been identified in the Management Information System of the Federal Inspection Service (SIGSIF). The aim of this study was to evaluate the main causes of condemnation in poultry slaughterhouses registered in the Federal Inspection Service from data entered into the SIGSIF system from 2006 to 2011. The total rate of condemnations observed during this period was 5.99%, and the major causes were contamination (1.80%), contusion /traumatic injuries (1.57%), dermatosis (0.74%) and cellulitis (0, 50%). Regional variations were observed in the occurrence of condemnations, and only in case of dermatosis a seasonal behavior was observed. The SIGSIF is an important source of information concerning the causes of condemnations in poultry slaughter and can be a useful tool for assessing the causes and proposing measures to prevent or mitigate risks. Campylobacteriosis has become common cause of diarrhea in humans and is associated with Guillain-Barre Syndrome, Reactive Arthritis and Irritable Bowel Syndrome is caused mainly by contaminated food and water intake in which the majority occurs from manipulation, preparation and consumption of poultry meat. The aim of this study was to estimate the prevalence of Campylobacter in chicken carcasses from slaughterhouses located in the states of Parana, Santa Catarina and Rio Grande do Sul in the South of Brazil. The samples were analyzed for Campylobacter enumeration using the ISO method 10272-2 and the species C. jejuni and C. coli, important for public health, were identified through Maldi-TOF mass spectrometry. From July 2017 to July 2018, 816 samples were analyzed, indicating the prevalence of 35.84%, with higher occurrence of C. jejuni (78.47%). No difference in prevalence was observed in relation to the size of the slaughterhouses. However, significant differences were noted among the three states in the southern region of the country, with the lowest prevalence being observed in Parana. The results reinforce the need to advance in the implementation of strategies to control this pathogen in the country, in order to safeguard consumer's health and contribute for the maintenance of Brazil's position in the international poultry meat market.
