The objective of this study was to develop a cultural adopted questionnaire for evaluation of knowledge (K), attitude (A) and practice (P) of Iranian population toward food safety during Covid-19.The study is based on an online questionnaire that filled by 712 Iranians over 16 years old. Exploratory factor analysis (EFA), confirmatory factor analysis (CFA) and reliability assessment were performed. The construct validity of A and P determined by EFA and confirmed by CFA. Difficulty index was used for K.The reliability score of questionnaire was satisfactory. The three items of K-A-P questionnaire were significantly associated with the total score of questionnaire. The KAP questionnaire regarding food safety in covid-19 consisted of 27 items multidimensional scale with strong psychometric features. The respondent showed a satisfactory level of KAP during covid-19 pandemics.The KAP questionnaire regarding food safety in covid-19 is a valid and reliable tool for measurement of knowledge, attitude and practice of people regarding food safety in covid-19.

Knowledge, attitudes and practices of Iranian people about food safety and hygiene during covid-19 pandemic

PurposeThe objective of this paper is to investigate the effect of the dining experience elements at gas stations foodservice outlets: (1) food quality, (2) service quality, (3) convenience and (4) atmospherics on customers' overall satisfaction and behavioral intention. This study also examines the mediating effect of overall satisfaction on dining experience elements and behavioral intention.Design/methodology/approachThis paper applies a quantitative approach, using partial least square-structural equation modeling for analysis. Survey data were collected online from 231 participants in the United States.FindingsConvenience and food quality are strong predictors of gas station food purchasing overall satisfaction and behavioral intention. Meanwhile, service quality and atmospherics were not statistically significant.Research limitations/implicationsThis study's survey was conducted online. Participants reflected on their dining experience at gas station dining outlets in the prior week.Practical implicationsThis study contributes to the existing foodservice literature by exploring dining at gas stations. It also provides a new insight into the importance of convenience in influencing overall satisfaction and behavior intention in a gas station foodservice setting.Social implicationsThis study helps with the understanding of consumer behavior and expectations of a fast-food setting. This study helps with enhancing convenience in order to improve the customers' experience and reduce their daily stress relating to wait time for purchasing fast-food meals.Originality/valueThis is the first study to examine consumer experience at a gas station food service setting.

Dining at gas stations: an analysis of nonconventional fast-food outlets from a consumer behavior perspective

Home delivery is one of the most critical steps in the food cycle regarding avoid COVID-19 in quick-service restaurants. The home delivery must meet or exceed food safety and hygienic practices because guest safety is the overall goal of foodservice. Therefore, home delivery is a complex process, but it can be successful when it focuses on guest needs and expectations. This study aims to measure the awareness, knowledge, and practices of food delivery handlers regarding home delivery procedures in order to apply the HACCP steps to protect food delivered from COVID-19 in quick-service restaurants. To achieve that, 600 self-administered questionnaires were distributed to home delivery handlers to ensure that proper hygienic home delivery practices during procedures are applied. The data were analyzed by SPSS program version 20. The result indicated that home delivery handlers know the right knowledge regarding avoiding COVID-19but they did not know how to apply it. As the total score of Attitudes and knowledge of food handlers mean is 4.52and, it is an excellent score, while the score of home delivery practices means is 3.86 and mean 3.32 in-home delivery area and equipment.
