TL;DR: Results demonstrated that the compositions of sterol and fatty acid were very similar for samples extracted by different methods, and PUFA was the chief component which accounts for approximately 35% of the total fatty acid.

Conditions for the separation of oil and protein from coconut milk emulsion

TL;DR: In this article, it was established that 17°C was the critical temperature for subsequent phase separation of the oil and protein in coconuts, and it was further shown that at 25°C the emulsion broke with separation of oil and proteins, and the oil obtained did not differ significantly from commercially available oil.
