Journal ArticleDOI

Inhibition of food-borne bacterial pathogens by bacteriocins from lactic acid bacteria isolated from meat.

TL;DR: Ten strains of bacteriocin-producing lactic acid bacteria were isolated from retail cuts of meat and the proteinaceous nature of the inhibitory substance was confirmed by demonstration of its sensitivity to proteolytic enzymes.
Journal ArticleDOI

Depletion of proton motive force by nisin in Listeria monocytogenes cells.

TL;DR: The basal proton motive force levels and the influence of the bacteriocin nisin on the PMF were determined in Listeria monocytogenes Scott A, finding that in the absence of nisin, the interconversion of the pH gradient and the membrane potential led to the maintenance of a fairly constant PMF at -160 mV over the external pH range 5.5 to 7.0.
