Journal ArticleDOI

Impact of Clostridium spp. on cheese characteristics: Microbiology, color, formation of volatile compounds and off-flavors

TL;DR: In this article, the impact of autochthonous and type-strains of Clostridium tyrobutyricum, Clostrichium butyricum and sporogenes on spoilage (late blowing defect, LBD), physico-chemical characteristics and volatile profile of cheese has been investigated.
Journal ArticleDOI

Antimicrobial properties of probiotic strains isolated from breast-fed infants

TL;DR: In this article, the characteristics of intestinal lactobacilli, bifidobacteria and enterococci isolated from breastfed infant faeces were investigated, and two selected isolates were identified at the species level and further characterized for their antimicrobial and safety features.
Journal ArticleDOI

Bifidobacterium pseudocatenulatum INIA P815: The first bacterium able to produce urolithins A and B from ellagic acid

TL;DR: The identification of a bifidobacterial strain producing urolithins A and B opens the possibility for its application as probiotic in functional foods and in the development of nutraceuticals.
Journal ArticleDOI

Probiotic Bacteria for Healthier Aging: Immunomodulation and Metabolism of Phytoestrogens

TL;DR: Beneficial effects of probiotic lactic acid bacteria and bifidobacteria to alleviate some of these disorders based on their immunomodulatory properties as well as their capacity to produce bioactive metabolites from dietary phytoestrogens are summarized.
Journal ArticleDOI

An improved method for the electrotransformation of lactic acid bacteria: A comparative survey.

TL;DR: An efficient method for genetic transformation of lactic acid bacteria by electroporation is presented and it is shown that the method proposed here yields the higher electrotransformation efficiency in the 12 LAB strains tested.
