Journal ArticleDOI

Partial characterization of white cabbages ( Brassica oleracea var . capitata f . alba ) from different regions by glucosinolates, bioactive compounds, total antioxidant activities and proteins

TL;DR: In this article, the authors compared the TRSAs and the main bioactive compounds in cabbage, and calculated correlations between antioxidative potency and the abundance of bioactive compound were highly statistically significant.
Journal ArticleDOI

The effect of heating and fermenting on antioxidant properties of white cabbage

TL;DR: It is demonstrated that in contrast to common expectation, typical culinary processing of cabbage increases its antioxidant potency, and may encourage the consumption of heat processed cabbage, especially that the release of antioxidants during heating may prevent oxidation of other food components, e.g. fats.
Journal ArticleDOI

Effects of Salvia officinalis and Thymus vulgaris on oxidant-induced DNA damage and antioxidant status in HepG2 cells.

TL;DR: The results showed that the oxidant-induced DNA lesions were significantly reduced in cells pre-treated with the plant extracts studied, and the observed DNA-protective activity could be explained by both elevation of GPx activity in cells prior to treatment with So and TV and antioxidant activity of SO and TV.
Journal ArticleDOI

Convenient identification of desulfoglucosinolates on the basis of mass spectra obtained during liquid chromatography–diode array–electrospray ionisation mass spectrometry analysis: Method verification for sprouts of different Brassicaceae species extracts

TL;DR: Liquid chromatography-electrospray ionisation-mass spectrometry was investigated as a potential method for the identification of glucosinolates and indicated that incorporation of MS detection into popular ISO method seems to result in an improved and more reliable approach to GLs determination.
