The effect of heating and fermenting on antioxidant properties of white cabbage
TL;DR: It is demonstrated that in contrast to common expectation, typical culinary processing of cabbage increases its antioxidant potency, and may encourage the consumption of heat processed cabbage, especially that the release of antioxidants during heating may prevent oxidation of other food components, e.g. fats.

TL;DR: The results showed that the oxidant-induced DNA lesions were significantly reduced in cells pre-treated with the plant extracts studied, and the observed DNA-protective activity could be explained by both elevation of GPx activity in cells prior to treatment with So and TV and antioxidant activity of SO and TV.

TL;DR: Liquid chromatography-electrospray ionisation-mass spectrometry was investigated as a potential method for the identification of glucosinolates and indicated that incorporation of MS detection into popular ISO method seems to result in an improved and more reliable approach to GLs determination.
