Phenolic acids and derivatives: studies on the relationship among structure, radical scavenging activity, and physicochemical parameters.

TL;DR: The antiradical activity of caffeic acid, dihydrocaffeic acid (5), and their corresponding n-alkyl esters was evaluated by using the 2,2-diphenyl-1-picrylhydrazyl radical (DPPH(*)) method, and it was found that dose-dependent scavenger effects were found in both series.

Nanoencapsulation of bovine lactoferrin for food and biopharmaceutical applications

TL;DR: Production of lactoferrin derivatives (starting from a purified commercial extract), encompassing full stabilization of its three-dimensional structure, has been attempted via nanoencapsulation within lipid nanovesicles, integrating a multiple water-in-oil- in-water emulsion, proving the effectiveness of the encapsulation procedure.
