Background : Milk’s composition is an excellent substrate for microorganism’s multiplication. Presence of Staphylococcus aureus and aerobic mesophilic bacteria are one of the most common problems in dairy farms. On dairy industry’s and milk farms Clean in Place (CIP) system higyenization are commonly used, then the cleaning occurs as a closed process, for better results sanitizans are applied, in order to obtain a safety food. This project aim to evaluate Staphylococcus aureus and aerobic mesophilic bacteria reduction after two milking higyenization process.  Materials, Methods & Results : This research was done on a Rio Grande do Sul North Milk farm, with mechanized milking and Clean in Place system for cleaning. For liners and CIP tubes higyenization commercial products as Sodium Hipoclorite 3% and phosphoric acid 11.3% are used for detergency, and peracetic acid 5% for sanitization. Milk bunk tank are higyenized with sodium hypoclorite 3.8% alcalin detergent. After higyenization steps liners, CIP’s water process, bulk milk tank and milk set were collected. At process 1, liners and CIP water were collected after milking, detergency and sanitization that occurred immediately at the detergency’s finish, while process 2 the sanitization was realized 8 h after detergency, before following milking. Cooling milk bulk tank was collected before and after detergency, and milk set after milkings Convencional microbiology were used to count and results in log 10 UFC.cm -2 . In CIP water’s after process 1 was 3.81 log 10 reduction to aerobic mesophilic bacteria ( P > 0.05) and reducing 4.51 log 10 ( P = 0.03). Meanwhile there was no significant reduction for mesophilic aerobic bacteria and S. aureus on the others samples (liners, bulk milk tank and milk set). Discussion : This results show the maintenance of milking machine contamination, and that even bacterial load reduced among hygienization steps this was not significant, suggesting that deteriorate and pathogenic microorganisms can remain on milk produced. Highlights are teat taps of milking machine as the major cause of contamination among cows. The results are worrying because Staphylococcus aureus contamination, once this bacteria causes alimentar diseases, even after higyenization process, which can damage public health that can reflect milk chain economically. Since amount of this microorganism found in milk is already sufficient to synthesize enterotoxins. In addition, resistance to disinfectants is another concern, as it may result in resistance to antimicrobial agents. So reduction of bacteria level among cleaning steps there was no significance, once the products and equipments on dairy and farms act as a constant elimination point of deteriorate and pathogenic microorganisms for the final product, milk. With this studies aim to aprimorate hygienization process on milk chain, in order to obtain a hygienic sanitary good product.

Microbiological contamination profile in soft drinks

The concern with food safety in the milk chain begins with the quality of the raw milk. Due to the health hazard that this food can carry when contaminated, the focus of studies has turned to microbiological and chemical contaminants that may be present in raw milk. There is an essential concern about conventional pathogens (Shiga toxin-producing Escherichia coli, Salmonella spp., Listeria monocytogenes, Campylobacter spp., Salmonella spp., and coagulase-positive Staphylococcus spp.) and emerging pathogens (Arcobacter butzleri, Yersinia enterocolitica, Mycobacterium avium ssp. paratuberculosis, Helicobacter pylori, and Cronobacter sakazakii) found in raw milk and dairy products. In addition, a growing public health issue has been raised regarding antimicrobial-resistant pathogens and commensal strains found in milk and dairy products. The antibiotic residues in milk can also damage health, such as allergies, and cause technological problems in dairy products processing. This health issue extends to other chemical contaminants such as heavy metals, pesticides, polycyclic aromatic hydrocarbons, melamine, dioxins, polychlorinated biphenyls, plasticizers, and additives in milk and dairy products. Other chemical substances formed by microorganisms are also of high importance, such as biogenic amines and mycotoxins. Therefore, this chapter aimed to revise and discuss relevant biological and chemical risks to ensure the safety and quality of raw milk and dairy products. 

Relevant safety aspects of raw milk for dairy foods processing.

One of the salting methods in cheese production implies salting the milk before coagulation used in making Domiati-type cheeses and a variety of autochthonous “Lički Škripavac” cheese. The most used sodium replacer is potassium. This study investigated the influence of different added salt concentrations (1%, 1.5%, and 2%) and NaCl to KCl ratios (100%, 50:50%, 25:75%) on the rennet coagulation and curd firmness in bovine milk. The milk coagulation parameters were determined with a computerized renneting meter, Lactodinamograph. The results showed significant interactions between the salt concentrations and NaCl to KCl ratios (p < 0.0001, α = 0.05) by prolonging the beginning of coagulation (10–20 min) and curd firming rate (1–5 min) by an increase in salt concentration for all treatments. The 50:50 treatment values (RCT, k20, a30, a60, amax) were closest to the control (without salt) and had the best results among all treatments in the lower (1%) and medium (1.5%) salt concentration (p > 0.0001, α = 0.05) while in the highest salt concentration (2%) the treatment effect was nonsignificant (p > 0.05). These results should help future studies make a lower sodium product appealing to consumers without losing quality.

Influence of Sodium and Potassium Chloride on Rennet Coagulation and Curd Firmness in Bovine Milk

The objective of this study was to evaluate and compare two chemical preservatives in terms of their sample preservation capabilities, considering the individual bacterial count (IBC) and time and temperature variables. The preservation of milk samples for microbiological analyses by the Brazilian Network of Milk Quality Control Laboratories requires the addition of preservatives to maintain the microbiota from the time of sample collection to the moment of analysis. The number of microorganisms can change as a result of the active ingredients and concentration of the preservative, as well as due to interactions between the preservatives, incubation time, and packaging temperature. The objective of this research was to evaluate the conservation potential of different concentrations of sodium azide and chloramphenicol on the analytical shelf life of milk samples. Two farms were selected, one with a low bacterial count and one with a high bacterial count. The milk was dispensed into sterile vials and tested after the addition of the usual concentrations of sodium azide and chloramphenicol, doubled concentrations, tripled concentrations, and as a control, without preservatives. The samples were incubated at 3 ± 1 °C, 6 ± 1 °C, and 9 ± 1 °C for 14 days and analyzed daily for their bacterial count by flow cytometry. The tripled preservative concentrations improved conservation, increasing the timespan of the analytical viability of the samples without altering the results.
