TL;DR: The purified recombinant alpha-galactosidase gene (r-AgalB) exhibited optimal activity at pH 3.5 and 55 degrees C, and showed higher hydrolytic activity towards galactomannan polysaccharides than toward small galacto-oligosaccharides (melibiose, raffinose and stachyose).
