Journal ArticleDOI
Quality of oil from damaged soybeans
TL;DR: In this article, a crude soybean oil (5.7% free fatty acid) was degummed in the laboratory with different reagents: water, phosphoric acid, and acetic anhydride.
Journal ArticleDOI
Flavor evaluation of copper-hydrogenated soybean oils
John C Cowan,C. D. Evans,Helen A. Moser,Gary R. List,S. Koritala,K. J. Moulton,Herbert J. Dutton +6 more
TL;DR: The use of copper catalyst to reduce selectively the linolenate in soybean oil improves its flavor stability as mentioned in this paper, but there are some differences in overall responses among cottonseed oil, copper-reduced (0.0%, 0.1%), and nickel-reducing (3.0%) soybean oils.
Journal ArticleDOI
Continuous Ultrasonic Degumming of Crude Soybean Oil
K. J. Moulton,T. L. Mounts +1 more
TL;DR: In this paper, an ultrasonic energy has been applied to continuous degumming for the efficient removal of phospholipids from crude soybean oil, and the results showed that the salad oil produced by this process was equivalent in quality and stability to a conventionally processed salad oil.
Journal ArticleDOI
Ultrasonic hydrogenation of soybean oil
TL;DR: In this paper, the rate of hydrogenation of soybean oil with either copper chromite or nickel catalysts increased more than a hundredfold with the aid of ultrasonication.
Journal ArticleDOI
Critical processing factors in desolventizing‐toasting soybean meal for feed
TL;DR: In this article, the authors examined the interrelation of several factors in the commercial desolventizing-toasting process for toasting soybean meal and determined how these relate to protein quality of the meal.
